Yummy recipe. Beef Goulash. (LINK)

November 14th 2007 14:25
The best thing for beef goulash is high quality Hungarian Paprika.

You will notice the difference.

Ingredients:

1/4 cup all purpose flour
1 tablespoon Hungarian sweet paprika
1 1/2 teaspoons of salt
1/2 teaspoon Hungarian hot paprika.
1/2 teaspoon black pepper
2 pounds beef stew meat diced or known as gravy beef.
4 tablespoons of vegetable oil
1 divided, roughly chopped large onion
4 cloves garlic minced well.
2 cans beef broth (stock)
1 can stewed tomatoes (undrained)
1 cup water
1 tablespoon dried marjoram leaves

1 large green bell pepper or capsicum in strips
sour cream

1. Combine flour, sweet paprika, salt hot paprika and black pepper into a ziplock style plastic food storage bag.
Add half of the beef, seal the bag and shake to coat the beef well with ingredients
Then repeat this process with the remaining beef.

2. Heat 1 1/2 tablespoons of oil in dutch oven over medium heat until hot. I generally use a large pot and that works out ok to.
add 1/2 of the coated beef, brown on all sides then transfer to a large bowl.

Repeat above step identically for other 1/2 of beef and transfer to same bowl.

3. heat remaining oil in your pot, add onion and garlic. Cook until tender stirring often. About 8 minutes.
Return beef and all juices to the pot.
Add beef broth, tomatoes with liquid, water and marjoram.

Bring to a boil over medium-high heat. Reduce heat to medium low. Cover and simmer very slowly for 90 minutes or a bit more until meat is melt in your mouth tender, stirring once or twice only.

When meat is tender stir in bell pepper or capsicum.

Cover and simmer for a further 8=10 minutes or until pepper is tender.

Ladel into bowls ands dollop with sour cream.

You will easily get four main meals from this recipe.

Some yummy options.

Cook rice as a side dish or add noodles. Very yummy meal with rice.
Place 5 or 6 peeled baby potatoes in for a heartier dish.
Also, to add a hint of freshness to the flavour, stir in 1 cup chopped coriander.

Enjoy
