Vegetarian skewers (Legume marinate la gratar)

Vegetables skewers
Ingredients:
6 bamboo or wooden skewers—soaked for 5 minutes in cold water
1 clove garlic—minced
2 tablespoons soy sauce
2 tablespoons sesame or peanut oil
1 teaspoon brown sugar (optional)
1 red or green pepper—cut into small pieces
1 courgette – cut into rounds
½ aubergine – cut into rounds (optional)
18 cherry tomatoes
1 onion – sliced
salt, black pepper
1 teaspoon of lemon juice (optional)
Also you can add tofu or halloumi cheese for your skewers. You can use whatever vegetables you have at the moment.
Method:Mix together the garlic, oil, soy sauce, salt, black pepper, lemon juice and brown sugar in a bowl until well combined. Add all the vegetables. You can leave it in fridge at least for an hour. Cook the skewers on a hot grill for 15-20 minutes, turning and brushing with the marinade.
Serving suggestion:
These skewers go perfectly with simple or fried rice.
In Romanian:
Legume marinate la gratar
Ingrediente:6 bete de bambus sau lemn — inmuiate in apa rece pentru 5 minute
1 catel usturoi – taiat marunt
1- 2 linguri sos de soia
1 lingurita zahar brun (optional)
1 lingura suc de lamaie (optional)
4 ciuperci – taiate in 4
1 ardei rosu sau verde – taiat in bucati mici
1 vanata – taiata rondele
18 rosii mici
1 ceapa – taiata bucati
Sare si piper negru
De asemenea se poate adauga branza tofu sau branza halloumi la legume. Se pot folosi si alte legume pe care le aveti la indemana.
Metoda:
Se amesteca impreuna usturoiul, sosul de soia, uleiul, sarea, piperul, sucul de lamaie si zaharul intr-un vas, apoi se adauga legumele si se lasa la frigider pentru cel putin 1 ora. Se pun legumele pe bete si se coc pe gratar cam 15-20 minute, se mai intorc pe cealalta parte si se stropesc cu marinada ramasa.
Se pot servi cu orez fiert.
