Vegetables skewers

Ingredients:
6 bamboo or wooden skewers—soaked for 5 minutes in cold water
1 clove garlic—minced
2 tablespoons soy sauce
2 tablespoons sesame or peanut oil
1 teaspoon brown sugar (optional)

4 fresh medium mushrooms—cut in half
1 red or green pepper—cut into small pieces
1 courgette – cut into rounds
½ aubergine – cut into rounds (optional)
18 cherry tomatoes
1 onion – sliced
salt, black pepper
1 teaspoon of lemon juice (optional)
Also you can add tofu or halloumi cheese for your skewers. You can use whatever vegetables you have at the moment.


Method:Mix together the garlic, oil, soy sauce, salt, black pepper, lemon juice and brown sugar in a bowl until well combined. Add all the vegetables. You can leave it in fridge at least for an hour. Cook the skewers on a hot grill for 15-20 minutes, turning and brushing with the marinade.
Serving suggestion:
These skewers go perfectly with simple or fried rice.


In Romanian:

Legume marinate la gratar

Ingrediente:6 bete de bambus sau lemn — inmuiate in apa rece pentru 5 minute
1 catel usturoi – taiat marunt
1- 2 linguri sos de soia

2 linguri ulei de susan sau arahide
1 lingurita zahar brun (optional)
1 lingura suc de lamaie (optional)
4 ciuperci – taiate in 4
1 ardei rosu sau verde – taiat in bucati mici
1 vanata – taiata rondele
18 rosii mici
1 ceapa – taiata bucati
Sare si piper negru
De asemenea se poate adauga branza tofu sau branza halloumi la legume. Se pot folosi si alte legume pe care le aveti la indemana.

Metoda:
Se amesteca impreuna usturoiul, sosul de soia, uleiul, sarea, piperul, sucul de lamaie si zaharul intr-un vas, apoi se adauga legumele si se lasa la frigider pentru cel putin 1 ora. Se pun legumele pe bete si se coc pe gratar cam 15-20 minute, se mai intorc pe cealalta parte si se stropesc cu marinada ramasa.
Se pot servi cu orez fiert.

Ingredients:
4 eggs
4 tablespoon sugar
4 tablespoon flour
4 tablespoon oil
¾ teaspoon salt

Method:
1. Separate the egg whites and yolks in different bowls.
2. Beat the egg whites sugar with a mixer until stiff. Add the flour.
3. Add the salt and oil to the egg yolks. Mix it with a spoon.

4. Pour gradually the egg whites to the egg yolks in order to combine both mixtures.
5. Preheat oven to 350°F. Butter an 8-inch square cake pan. Pour the mixture in the cake pan and leave it in the oven for about 20 – 30 minutes.

6. Remove the cake from the pan and decorate the cake with strawberries and kiwi.

7. It can be served either with cream or ice cream.

Romanian

Ingrediente:
4 oua
4 linguri zahar
4 linguri faina
4 linguri ulei
Un varf de cutit sare

Mod de prepare :
1.Se separa albusul si galbenusul in 2 boluri.
2.Se bat albusurile zaharul cu mixerul pana se intaresc. Apoi se adauga faina si se amesteca cu o lingura.
3.Se adauga sarea si uleiul la galbenusuri. Se amesteca cu o lingura.
4.Se toarna gradat albusul in vasul cu galbenusul si se amesteca bine cele 2 compozitii.
5.Se incalzeste cuptorul la 350°F. Se unge o tava rotunda cu unt si se toarna compozitia deasupra. Se lasa la cuptor 20-30 de minute.
6.Se scoate tava de la cuptor, se aseaza checul pe o farfurie plata, se orneaza cu capsune si kiwi.
7.Se poate servi cu smantana sau inghetata.

Falafel

Ingredients:
1cup Dried Chickpeas
¼ cup Onion, finely minced
3 Cloves of Garlic, minced
1 teaspoon Salt
½ teaspoon Cumin
½ teaspoon Coriander or fresh Coriander
¼ cup Parsley, finely minced (optional)
¼ black pepper

Method:
Soak the chickpeas in water for at least 6 hours. Then place them into your food processor and pulse it until the beans resemble coarse bread crumbs. Add your Onion, garlic, Salt, Cumin, black pepper and Coriander and started pulsing until the mixture just starts to resemble a very coarse paste consistency. If it is too dry add some of the liquide from the cheakpeas. Throw in your Parsley and pulse it until the mixture is a fine gritty paste.
Make small balls andfry them in plenty of oil until browned. Cook them in small batches at a time, they will crisp up fairly quickly in just a couple minutes.

To make a falafel sandwich, open a pitta bread and put 3-4 balls of falafel, a few slices of tomatoes, a couple of pickles, fries, salt, pepper, mayonnaise and ketchup.

Romanian:

Ingrediente:
1 cana naut, inmuiat pentru cel putin 6 ore
1/4 cana ceapa, tocata
3 catei usturoi
1 lingurita sare
1/2 lingurite chimen
1/2 lingurite coriandru, macinat
1/4 lingurite piper negru, macinat
1/4 cana patrunjel (obtional)
Mod de preparare:
Se pune la inmuiat nautul pentru cel putin 6 ore.
Pentru a prepara falafelul se dau de doua ori printr-o masina de tocat cu cea mai mica sita (sau se foloseste robotul de bucatarie): nautul, ceapa, patrunjelul tocat, usturoiul, coriandrul, chimenul, sarea, piperul. Daca pasta este foarte uscata se adauga putina apa, care a ramas de la naut. Se formeaza o pasta fina. Se fac bule mici. In caz ca nu se tin bulele intregi se poate adauga faina, un cartof fiert sau un ou pentru a lega compozitia mai bine.
Falafelul se prajeste bine in mult ulei, pana devine maroniu-inchis, cam 4-5 minute.
Pentru a face falafel-sandwich, se pun feliile de rosie si salata tocata impreuna cu 2 bule de falafel intre 2 paini mari libaneze (lipii), adaugandu-se si castraveti murati, cartofi prajiti, maioneza si ketchup, sare si piper dupa gust.
