Just for something different, this is the after school snack for my ravenous children. I found the recipe for this Banana Walnut and Date Loaf some time ago in the paper, and it has been 'magneted' to the fridge ever since. With a massive box of bananas quickly ripening downstairs, today had to be the day to make it.
Cleverly disguised as a wrapped gift, the children will be ingesting dates, bananas, wholemeal flour, walnuts and oranges. Smart cookie.
If you would like to indulge in some, here is the recipe:
banana, walnut and date loaf
90g butter
1/2 cup soft brown sugar
grated zest 1 orange
2 eggs
1 cup chopped dates
3 large bananas mashed
11/2 cup wholemeal self-raising flour
1/3 cup orange juice
1/2 cup chopped walnuts
Preheat oven to moderate. Grease and line a 20cm x 12cm loaf pan with baking paper.
Beat butter and sugar in an electric mixer until creamy. Add orange zest with one egg and beat well. Add remaining egg and beat to a smooth batter. Fold in dates, bananas, flour, orange juice and walnuts. Blend well.
Spoon into prepared loaf pan and bake for about 45 min or until cooked when tested with a cake skewer. Cool in pan 5 min before turning out on to a rack to cool completely.
I wrapped my pieces in waxed paper - reminding me of my primary school 'playlunch' days. Do you remember it even came in a rainbow colour? Tied up with string and a few of my current favorite garden blooms, I'm sure this will be a hit. Enjoy your loaf.
