Southern Style Collard Greens

I like my collard greens fresh but I didn't have any today so I had to use canned. These Southern style collard greens are still tasty.
SOUTHERN STYLE COLLARD GREENS
2 cans collard greens
4 strips bacon (each strip cut into 3 pieces)
1/2 small onion sliced
4 eggs
salt to taste
Place 1 cup water and bacon into a medium size sauce pan. Boil over medium heat until almost all of the water has cooked down. Add the two cans of collard greens (juice and all) and the sliced onion.
Boil for about 10 minutes, just until the onions are tender. Add the eggs. Run a fork through the eggs to spread them around a little.
Cover with a lid and reduce heat to low. Cook until the eggs are set.
Serve hot with a big chunk of cornbread and enjoy.
You can't get any more Southern than these Southern Style Collard Greens!
