Tomato Soup with Blue Cheese

roasted tomatoes with garlic
Yummy... fresh tomatoes, carrots, & leeks with crumbled blue cheese and a bit of heavy cream swirled in. The tomatoes are roasted with garlic for 30min at 400 degrees. The wonderful smells flow through the house making for a very inviting meal. As if that wasn't enough it's garnished with bits of bacon.

Courgette (Zucchini) Soup with Pasta

Grated zucchini & onion

The Zucchini soup was a breeze to make. Simple ingredients. The recipe called for lemon juice which gave the soup a fresh flavor, and garnished with sour cream. Even my 7 year old thought it was good.

Beet Root and Mushroom Ravioli Soup

Making Mushroom Ravioli
This soup took a bit of work to make. I do not own any special tools for making ravoili, and so I had to make each one by hand. The flavor however, was outstanding! the pairing of ravioli with the beets really made this soup. My husband & I agree that it would have been dull without them. I think if we ever try this soup again we will add more stock and puree' the beets. It just didn't seem to have enough liquid to be called soup.

My husband and I have recently purchased, 'The Complete Book Of 400 Soups' This book has so many different soups, broths, chowders, bisques, consommes, & gumbos from around the world that I've decided to photograph and write about each one we try.
