COCK-A-LEEKIE SOUP
Ingredients
1 ½ bunches of Leeks – diced
2 medium Onions – diced
3 stalks of Celery – diced
¼ lb. Butter
4 Cups Chicken Stock
2 lbs. Potatoes – diced
Half & Half
Salt and Pepper to taste.
Instructions
Saute the vegetables in butter until soft.
Add chicken stock and potatoes.
Simmer 1 ½ hour.
Remove from heat and let cool down to a warm touch.
Put mixture in blender and blend well.
Before serving, reheat mixture to boiling point.
Reduce the heat, add half & half until consistency of a thick cream soup.
DO NOT BOIL.
Salt and Pepper to taste.
