Smothered Fried Chicken

I had some chicken left over from the 5 pound bag of leg quarters that I used to make my chicken and dumplings last night, so I decided to make some smothered fried chicken to go with the leftover chicken and dumplings. I usually split by meat up into meal size portions, but I had ran out of freezer bags so...more chicken tonight. I promise something different from chicken tomorrow!

My smothered fried chicken is very basic, no eleven herbs and spices here. This smothered fried chicken recipe is the same one my mother used and her mother and so on, handed down from generation to generation. No frills but a lot of flavor!

Smothered Fried Chicken Recipe

4 leg quarters cut into leg and thigh pieces (makes 8 pieces of chicken)
(Any cut of chicken may be used.)
1 cup seasoned flour
cooking oil

To season the flour: Put the one cup of flour into a medium size bowl. Add 1 teaspoon salt and 1 teaspoon black pepper. Mix well.

Pour about one inch of cooking oil into a frying pan. Place on medium heat and let the oil get hot.

Rinse the chicken pieces thoroughly, don't dry, immediately dredge the wet chicken pieces with the seasoned flour, making sure to coat evenly. If a crispier chicken is desired, lightly moisten the chicken again and dredge in flour once more. Carefully place the coated chicken into your hot oil. Repeat this process until all chicken pieces have been coated.

Reduce heat to low, cover the frying chicken in the pan with a lid and cook for five minutes. Remove the lid (careful of the steam) and turn the chicken over and replace the lid, fry another five minutes. Repeat this process until the smothered fried chicken has cooked for 20 minutes or as long as it takes for the juices to run clear, when the chicken is pricked with a fork. (10 minutes on each side)

Chicken - (on sale 37 cents a pound) $1.02. Cooking oil - 75 cents. Flour - 25 cents. Salt & pepper - 5 cents. Total cost for 8 pieces of smothered fried chicken - $2.07!

Nothing better than simple fried chicken. With mine, I marinade the chicken in buttermilk overnight then coat it in flour mixed with five spice, salt and pepper. Not as good as KFC but cheaper!
