Recipe -- blue cheese dressing
July 25th 2010 22:05
The secret to this blue-cheese dressing is that it has a lot of blue-cheese. I haven’t figured out either the price or the calories, and I’m not sure I would want to know either. Since buttermilk isn’t a common household staple, just use more yogurt and adjust the thickness with fat free milk, or even water.
1 cup mayonnaise
1 cup crumbled blue cheese plus some more for sprinkling
½ cup fat free yogurt
½ cup buttermilk
(optional) 1 tablespoonful more or less of a mild vinegar, such as white wine or rice vinegar.
Put everything in a blender or food processor and let it go until everything is smooth. Refrigerate. When serving, sprinkle with a bit more of the blue-cheese.
