Ravioli with lemon butter sauce

Ravioli is pasta which is filled, usually with ricotta cheese or vegetables like pumpkin and mushroom. Ravioli is commonly topped with pesto, cream or olive oil based sauces.
Makes for 2 persons
10-15 pieces fresh ravioli per person
Extra virgin olive oil
Butter
3 cloves garlic, diced
Zest of ˝ lemon
Dried chilli flakes
Organic dried oregano
Sea salt and pepper to taste
Topping:
Fresh parsley, diced
Parmesan cheese
1. Cook ravioli pieces in rapid boiling water for about 10-12 mins till al dente. Be careful not to overcook the ravioli’s as they tend to open up.
2. Drain the ravioli pieces and coat well with olive oil. Set aside.
3. Heat 2 tablespoons olive oil and 3 tablespoons butter in a pan.
4. Brown garlic, zest of lemon, chilli flakes and oregano.
5. Cook sauce for about 2 mins on low flame.
6. Add ravioli pieces and coat well with the lemon butter sauce.
7. Lastly, add sea salt and pepper to taste. Do try to use sea salt here as it goes well with the lemon butter sauce.
8. Spoon into dish. Grate parmesan cheese over ravioli's and sprinkle with parsley before serving.
