BEEF ENCHILADAS
INGREDIENTS
1 lb. Lean ground beef
8 soft Tortilla Shells
1 15 oz. Can Mexican-style diced tomatoes
1 Can Red Enchilada Sauce
1 ½ Cups Sliced Black Olives
1 Can diced Green Chilies
1 Medium Vidalia onion, diced
2 Green Onions, sliced
1 Taco Seasoning Packet
1 Cup Finely shredded Mexican cheese blend
1 Cup shredded Cheddar Cheese
INSTRUCTIONS
1. Preheat oven to 325 degrees. In 12-inch skillet lightly cook ground beef, drain off fat. Stir in un-drained tomatoes, diced Vidalia onion, and the diced Green Chilies. Add: Taco Seasoning, (do not add water to seasoning packet) heat through.
2. Grease an 8 x 8 x 2 baking dish. Coat the baking dish with 1/4 Cup of the Red Enchilada Sauce. Place 2 Tortilla shells over the Enchilada Sauce. Sparingly, top Tortilla shells with the ground beef and tomato mixture. Sprinkle with Olives and sliced Green Onions. Sprinkle with both Cheeses, just enough to cover. Using a Tablespoon, pour Red Enchilada Sauce over the Cheese in a criss-cross pattern.
3. Repeat the layering of Tortillas and other ingredients.
4. Bake, covered, 30 minutes. Remove cover. Bake, uncovered, 15 minutes or until cheese is lightly browned. Let stand for 5 minutes.
