POOR MAN’S QUICHE
Ingredients
2 slices thick Bacon
2 cups fresh Spinach, stems removed
3 large Okra, cut into small pieces
1 Jalapeno Pepper, diced small
1/2 Green Pepper, diced small
¾ cup Flour
4 large Eggs
2 cups Mayonnaise
½ teaspoon Old Bay Seasoning
Instructions
Cut raw Bacon, with scissors, into ½ inch pieces.
Place in fry pan over medium low heat.
Dice Jalapeno and Green Peppers; add to fry pan.
Cut Okra into ¼ inch rounds; add to fry pan.
Reduce heat to low.
Wash and remove stems from Spinach, add to fry pan.
Add Old Bay Seasoning to cooked Bacon and vegetables.
Turn off heat when Spinach has wilted.
In a bowl, mix together the Mayonnaise and Eggs, until smooth.
Add Flour to Eggs and Mayo. Mix until smooth.
Prepare an 8 x 8 x 2 inch pan with non-stick spray.
Place cooked Bacon and vegetables in prepared pan.
Pour the batter over the Bacon and vegetables; lightly mix together.
Bake at 375 degrees for 25 minutes
