Preparing and Cooking New Potatoes

There is nothing more budget friendly than cooking vegetables straight from your garden. New potatoes are delicious no matter how you prepare them. This simple recipe takes only four ingredients, but tastes like a gourmet side dish.
Before you cook new potatoes you must prepare them. Home grown new potatoes are covered with dirt. Using a vegetable brush or a clean wash cloth, scrub away the dirt.
Using the tip of a knife, remove any deep set eyes from the new potatoes. This will remove any dirt that washing may not have removed.
Cut the larger new potatoes into quarters, smaller ones into halves but the little new potatoes can be left whole.
Now that you have prepared your new potatoes, it's time to cook them. Place the prepared new potatoes into a medium size sauce pan. Add enough water to cover the new potatoes completely. Place the pan on high heat and boil the new potatoes for 20 to 30 minutes.
An easy way to know when the new potatoes are done is to poke a fork in the center of the largest potato, gently twist the fork. If the new potato breaks apart easily, they are fully cooked.
Drain the cooked new potatoes, add the butter. Salt and pepper to taste. Enjoy!
