Potato Pancakes


Potato pancakes are a great way to use left over potatoes, be they mashed potatoes, fried potatoes, hash browns or even cooked frozen tater tots! Don't throw out those left over potatoes, save some money and make an entirely new and different dish with those left over potatoes, one that your family is sure to love! Potato pancakes.

Potato Pancakes Recipe

1 cup of left over potatoes
1/8 cup finely chopped onion
1/4 cup shredded cheese(any variety)
1 egg
3 to 4 tbs. self rising flour
cooking oil
salt

The measurements depend on the amount of potatoes that you have. Usually one egg will do the trick but if you have more than 2 cups of potatoes left over, then you will need to double the recipe. More potato pancakes to enjoy!

Combine the first five ingredients.

Put enough cooking oil into the bottom of a non-stick skillet to have about a 1/4 inch of oil in the bottom of the pan. Heat the oil on medium heat, just until hot.

Dip out the potato pancake mixture by the heaping tablespoon full and place into your hand to flatten into a pancake shaped patty. (Be sure to wash your hands first and also in between making the potato pancake patties.) Place the potato pancake patties into the hot oil and fry until golden brown on each side. About two minutes per side. Place the potato pancakes on paper towels to absorb the excess cooking oil. Salt the potato pancakes lightly.

Serve these potato pancakes while still warm. Potato pancakes are a great side dish for any meal!

If I went and washed my hands in between cooking patties, I'd end up burning the ones in the pan. I would just wash my hands before starting and when I had finished. That should be adequate.

I'm doing a food in the community course starting next Wednesday, I might learn different on this one.

I love your idea for using up left-over potatoes. Thank you.

I am a fanatic about cleanliness when I am cooking, cross contamination is a big issue for me. Also, with potato pancakes, if you don't wash your hands in between...the batter will stick to your hands and this will make it much harder to complete your dish.

I made something similar to these last week for the first time for my daughter and she actually ate them. Even added peas, corn and carrots and she ate them without any fuss whatsoever! Rare for a girl who usually eats around her vegetables!

Oooh! Never thought of adding those ingredients! I bet the potato pancakes tasted really good, or else your daughter would not have ate them!
