Mum's Banana Recipes

I totally HATE bananas. I try every year to eat one more banana thinking it maybe like coffee, avocados and other developed taste foods. It never works! But I do love bananas in other things and preferably sweet things. Maybe it's a texture thing as to why I don't like them. So mum, in her infinite wisdom provided me with a few awesome banana recipes. Listed below care of mum. ENJOY!
HIGH ENERGY, LOW FAT BANANA MUFFINS
Grease muffin tray butter and flour / or just spray with olive oil
2 ripe bananas
300g ( 2 cups ) SR Flour
Pinch salt
1 tsp Bicarbonate of soda
2 tsp ground cinnamon
200g ( 1 cup brown sugar )
185 mls (3/4 cup ) skim milk
1/4 cup plain low fat yoghurt
2 eggs lightly whisked
You can add some ginger or even dates chopped if you like
Preheat oven to 180 degrees C . Mash bananas in medium bowl with fork. Add SR Flour, salt, bi-carb of soda, cinnamon, brown sugar, milk, youghurt and eggs and stir UNTIL just combined Spoon into 12 ( I spread it out into around 18 - using 2 trays ) Bake for 15 - 20 minutes. Stand in pan for a minute or so, then take out. Yum. Can freeze and put into micro for a warm up when required.
MOIST BANANA CAKE
250g butter
1 cup castor sugar
3 eggs
3 very ripe bananas - mashed
2 cups SR flour
Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in bananas, then sifted flour. Bake in lightly greased loaf pan at 180 degree oven for 40 - 45 minutes.
WALNUT AND BANANA CAKE
125g butter
2 eggs
pinch salt
1/2 cup walnuts pieces - crushed slightly - any nut will do
1 1/2 cups SR flour
1 cup mashed bananas
1/2 tspn bi-carb soda
4 Tablespn milk
Cream butter and sugar, add eggs and beat well. Add bananas and walnuts, then sifted flour and salt. Dissolve soda in milk, add to mixture. Bake 1 - 1 1/2 hours in 180 degree. Cook in a loaf tin (lightly greased). Ice cake after or have with butter and jam.

Something about the smell...texture...taste...ble aaah!
...but I do like it when it's not *itself* -- toasted banana walnut bread, yum!
