Mandarin Cake takes the cake
February 8th 2011 01:07
I love cake ... chocolate cake, red velvet cake, carrot cake. You name the cake, I love it. Nevertheless, this next recipe is one that I was a little hesitant to try. My mother-in-law used to make this recipe, and now every time I do, I can't help but think of her.
This is an all-seasons treat - light enough to eat on a hot day with a tall, cold glass of milk, but just as good on a cold, wintery one (cue visions of last week) with a hot cup of coffee. It's become one of my favorites, but you be the judge and let me know what you think.
Mandarin Cake*
Ingredients
2 cups flour
2 cups sugar
2 eggs
2 11-ounce cans of mandarin oranges, drained
½ teaspoon salt
2 teaspoons baking soda
Sauce
1 ½ cups brown sugar
6 tablespoons butter
6 tablespoons milk
Whipped cream for garnish
Preparation
Preheat oven to 350 degrees F.
For cake, combine all six ingredients until smooth before pouring into a greased 9x13 baking dish. Bake for 35 minutes. Test with toothpick to make sure cake is done.
In a heavy saucepan, pour in brown sugar, butter and milk. Bring to a boil, stirring constantly for five minutes.
Poke the whole cake with a fork or a toothpick (make sure you go deep) and pour the sauce over the entire cake.
*May be served warm or cold with a dollop of whipped cream.
Helpful hints
When you buy a can of frosting from the store, take it out of the container and whip it up with a mixer for a few minutes. This will stretch the frosting and cut calories and sugar per serving.
