Look at that dark green goodness! Like a swamp, but more green, clean and sweet-smelling! This Spinach soup was surprisingly very quick to make and actually full of flavour! I think I have found my new calling in life! “To maketh soup of the thicketh variety by blending ye vegetables”. But do you want to know the best part! Well, I have recently worked out that my daily vegetable intake can be very sad indeed, but if you drink soup which is almost 100% vegetable, then that makes getting your daily serve of vegetables a cinch! When you cook this soup, you will also realise that spinach leaves shrink A LOT during cooking, so use a big bunch of spinach!

Spinach soup

Ingredients: 1 onion chopped, 1 potato diced, 1 bunch of spinach washed and ends chopped off, salt and pepper, water

Steps: Transfer the onion and potato to a large pot and cover 2cm with water. Bring to the boil, then continue to boil until onion and potato is soft (about 15-20 minutes, adding additional water if necessary to ensure the potato and onion are covered). Add the spinach and boil for 5 minutes. Blend the whole mixture in a food processor then transfer the soup back to a large pot. Season with salt and pepper (and add additional water if the consistency is too thick). Serve immediately!

Yes the chocolate pizza may not look like much to the unknowing observer, but do not be fooled! It is an absolutely delicious concoction! A must have for the chocolate lover! And so easy to make, that even the kids can do it! I think it is basically every kids dream. Chocolate and marshmallows on a pizza! Who wouldn’t want to try a piece!? I think even the most sceptical would take a bite. I think the bananas are an essential part of the chocolate pizza as the banana taste seems to somewhat counteract the *too much sugar* possibility, however, another good alternative is to use strawberries when they are in season. Pizza never looked so sweet!

Chocolate pizza

Ingredients: 1 lebanese flatbread, 1 banana sliced, 1 tub of Nutella and 1 bag of mini marshmallows.

Steps: Preheat the oven to 180 degrees Celsius. Place the Lebanese bread on a baking tray and bake for 5-10 minutes or until crispy. Remove from the oven, then spread the bread with 3 tbsp of Nutella, sprinkle with banana pieces and marshmallows. Return to the oven for an extra 5 minutes (to slightly toast the marshmallows). Remove from the oven, cut into pieces and serve!

Makes 1 pizza

Mmmm… Delicious Banana and date bread! The perfect snack for morning or afternoon tea! What I found most amazing about this recipe is that it does not contain any butter or oil! Instead it uses milk as the *mixing agent*, so it is indeed of the healthier variety! I love bread and toast! Especially when it is thickly sliced! I’m not really sure why exactly that is, but I think it might have something to do with *fat toast* being both crunchy and soft at the same time, whilst very thin toast tends to get very dry very easily. Either way, when it comes to banana bread, thick slices are definitely the way to go! This banana and date bread also tastes great (if not better) the next day! Especially when toasted and buttered! My tastebuds are tingling in anticipation!

Banana and date bread


Ingredients: 2 cups self-raising flour, 1 tsp bicarbonate of soda,1 tsp ground nutmeg, ½ cup brown sugar, 150g fresh dates, pitted and roughly chopped, 1 cup milk, 2 eggs, 1 cup mashed ripe* banana (*ripe banana intensifies the flavour)

Steps: Preheat the oven to 180 degrees Celsius. Grease and line a 24 x 13.5cm loaf tin. Sift flour, bicarbonate of soda and nutmeg into a large bowl. Add the sugar and dates and mix until the dates are well coated with the flour mixture.

Combine the milk and eggs in a medium bowl, whisk and then fold into the date mixture until batter is well combined. Fold in the mashed bananas. Spoon mixture into prepared tin and bake for 45-50 minutes or until cooked when tested with a skewer. Cool for 10 minutes before serving. Serve sliced and buttered or toasted.

Makes 1 loaf

ARGH! I have an exam tomorrow! And despite actually studying fairly well for this one, I seemed to have picked up that last minute bug of “*gasp*! I know nothing! What do I do! What do I do!” Yes the old last-minute-exasperation-impe nding-doom bug is very contagious, springing from absolute thin air! It probably doesn’t help that the weather is currently so wet and glum, I feel like I could bottle it up, and release it on the Sahara dessert to cause flash floods, but there you go.

Did you know that when you are stressed, you naturally choose foods that *crunch* to help you de-stress? Well from this fact I have deduced that I must be somewhat stressed because by mid-afternoon I am really craving a snack which has a *crunch*! Yes, I am indeed less partial to cake at the moment (which is a h-u-g-e breakthrough for me); and yet sadly I do not appear to be turning rake thin anytime soon (but that’s beside the point). So to help fix this craving, I invented some nifty little Sweet chilli and cheese pastry spirals! Very quick and easy to make, and when you eat them after they have been freshly baked they have the best crunch as well as taste! They are so easy to munch on, that it is very easy to eat a whole batch by yourself, so WATCH OUT! Otherwise before you know it… “hello”… plate full of crumbs!

What are these patty cases worth to you?

Are supermarkets forcing specialty stores to close? Or are those *big-chain* supermarkets just giving consumers more for their money? Or are specialty stores just overcharging us? I’m not sure. But what I do know is that there is HUGE price difference which is very real! For example, these mini patty cases which are commonly used for baking cupcakes cost just over $1.50 in supermarkets but exactly the same patty cases in another baking specialty store cost upwards of $5! That’s like a 300% difference! It’s unbelievable!

With these cold winter days giving everyone a chill, its time for some comforting wholesome food! And nothing beats a mean soup! Especially when it is of the thick, flavoursome variety, like this Spicy tomato and fennel soup! Roasting the vegetables in the oven really brings out a lot of flavour in the soup, making it that much more delicious! I can safely say before making tomato soup, I had some doubts on how tasty such a soup could be. ‘Would it be one of those soups that looked exciting because of its colour but then turned out to be bland?’ This was one of my worse fears. But “post-soup making” I can happily say that this is a v-e-r-y delicious soup, which I will definitely make again!

So in the past I’ve made the original cherry clafoutis, but this time I just felt like a *bit* of a change, so I decided to test out the chocolate version. It is much the same in terms of the texture and cherry goodness, except this time there is that hint of chocolate, which I think really complements the cherries! But what I’ve really come to love most about this dessert is how it is positively one of THE most easy desserts to make and yet, once dusted in icing sugar it looks absolutely divine- as if one has spent hours laboriously at work in the kitchen. The only thing you have to watch out for is that you don’t overcook it (so don’t forget when you put it in the oven). Otherwise, it’s not bad, not bad at all!

Ooh!! i just went to Bilson's 2 weeks ago for the first time! I had the fin bec, which is like the degustation but smaller and was full by the end anyways!
I was blown away by the delicious food!
The chocolate platter for dessert has SO many textures, it is absolutely divine!
Would love to go again, but as you mentioned, rather expensive

Feel free to use canned or fresh crab meat!
I used canned crab meat because it was handy in the cupboard, but I'm certain it would taste even more amazing with fresh crab!

I'm not sure about the exact price (as different places will vary slightly) however the smaller ones should be under $100. You should be able to buy them from all good appliance stores as well as places like David Jones and Myer!

I just used single cream in my recipe, but you could always live life on the edge and try out double! Might be a bit too thick and creamy though
