Ingredients:

4x175g salmon fillets, 2.5cm thick, skinless
8 baby artichokes
2x350g bulbs of fennel
juice of 1 lemon
1 tablespoon corn oil
2 medium plum tomatoes, cored and cut in thick slices, horizontally
25g walnuts, coarsley chopped
2 tablespoons chives, minced
2 tablespoons walnut oil
1 tablespoon spanish sherry vinegar or the juice of 1 lemon.
a little salt and freshly ground black pepper

Method:

Remove the stem and the outer leaves of the baby artichokes. With a paring knife trim the bottom and cut off the leaves 1cm above the heart.

Place the artichokes in a pot with 1 litre boiling water, half of the lemon juice and a pinch of salt. Cook for 15 to 20 minutes until tender when pierced with a knife. Remove from heat, drain and allow to cool. Quarter the artichoke hearts and set aside.

Trim off the top greens and the outer stalks of the fennel bulbs. Chop the fennel scraps roughly and set them aside. Slice the fennel bulbs very thinly. Place the sliced fennel in a bowl, drizzle the remaining lemon juice over, cover and refrigerate until needed. Scatter the fennel scraps over the salmon, season and cook in hot oil for 5 minutes.

Turn the salmon over, place the fennel scraps back onto the salmon and cook for another 3-5 minutes. Transfer the salmon to a serving plate and discard the fennel scraps. Combine the sliced fennel with artichokes, sliced tomatoes, walnuts, half of the chives, walnut oil and sherry vinegar. Toss lightly.

Ingredients:

4 x 4 bone trimmed rack of lamb
1 bch coriander, finely chopped
½ bch parsley, chopped
2 cloves of garlic, peeled and crushed
10 grams salt level
20 grams cumin ground
20 grams paprika
10 grams tumeric
5 grams of chilli small seeds removed
20mls olive oil
20mls lemon juice
10 ginger ground
5 grams black pepper ground
500grams prepared polenta

mustard seed jus ingredients

100 grams carrots
100 grams kg celery
100 grams onion
6 sprigs hyme
15 black peppercorns
10 grams parsley stalks
40mls oil
50grams mushrooms,
2 litres lamb stock
20 grams whole grain mustard
Method:

1) Mix all ingredients except Jus together

2) Prepare Polenta as folows

Prepare Polenta as per directions and cut shape of choice
Lightly oil Polenat and season
Chargrill polenta shape
Store Polenta in plastic container until service

3) Prepare Mustard Jus as follows

Sauté vegetables and herbs in oil until soft and lightly browned
Deglaze the pan by slowly adding lamb stock
Reduce by 2/3
Pass off into a fresh pot
Add wholegrain mustard to prepared lamb jus

4) To Serve

Lightly oil the trimmed rack of lamb
Coat with the Moroccan spice and marinate for 3 hours
Seal in black pan and finish in oven 180 C: approximately 20 minutes
Heat polenta in oven, when hot arrange on plate
Cut 2 cutlets from rack and leave 2 whole and arrange on polenta
Coat mustard seed jus on plate
Garnish to finish

Grilled Jumbo Prawns With Citrus Sauce

Ingredients:

marinade

1/2 cup vegetable oil
1 grated zest of 1 orange
1 grated zest of 1 lime
1 tbsp fresh basil, minced or
1/2 tbsp dried basil
1 tsp fresh thyme, minced or1/2 tsp dried
500g extra-large prawns about 18 shells removed;

vegetable saute

1 tbsp vegetable oil
3 cup vegetable, (use artichokes, fennel,
1 clove garlic, minced
1 salt and ground black pepper
3 tbsp balsamic vinegar

citrus sauce

1 tbsp orange juice
1 tbsp grapefruit juice
1 tbsp lime juice
2 tbsp honey
1 tbsp dijon-style mustard


Method:

For the marinade, combine all the ingredients in a mixing bowl. Add
the prawn and marinate for about 3 hours.. The safest thing to do is to marinate in the
refrigerator.

When the marinating time is over, make the vegetable saute.

In a saute pan over medium heat, warm the oil. Add the vegetables and
garlic; saute for 4 minutes, stirring constantly.

Season with salt
and pepper. Add the balsamic vinegar and continue cooking for 1
minute more.

To make the citrus vinaigrette, combine all the ingredients in a
mixing bowl. Whisk to dissolve the honey.

Remove the prawn from the marinade and grill for 2 minutes
on each side.

Divide the sauteed vegetables among 6 salad plates, put 3 prawn on
top of each, and pour on the citrus vinaigrette.


Serving Suggestions:

Serves 4-6
