Anyone get a look at that truck? Another weekend has come and going but it was a good one. WVU and the Falcons had easy ones, hung out with some friends in the neighborhood, and topped it off by going to see Vaughn and Favreau's new movie Couples Retreat. Even though it's hotter than hell outside there's always something going on in Florida this time of year. Next week it's Stone Crab weekend followed by Oktoberfest and finishing right into Halloween. My liver just crapped it's pants! Oh well, here are some thoughts form the weekend....Happy Columbus Day!

Unfortunately the Yankees look unbeatable......Los Angeles doesn't have an NFL team but they got two in the Championship Series.....I complain about the Florida heat but I'll take it over the Colorado cold any day.....BTW, Go Rockies!.....Kristen Bell is smokin'.....Congrats to my niece Erin for the newest addition to the family, Baby Jackson
.....Glad to see K-Fed's in fat camp.....Derek Anderson was 2/17 for 23 yards? Really?.....Whose a bigger grease fire at this point.....Bucs, Bills, or Raiders?.....I hate to see Bobby Bowden go out like this.....Beer tip: Hacker Pschorr, delicious!.....Vince Vaughn was on point in Couples Retreat but Favreau stole the show.....You might want to pick up Letterman in your death pool.....this pig flu shit has woken my inner OCD.....Matty Ice looks like the real McCoy.....BTW, the Entourage season finale was outstanding.....Pork enchiladas are highly underrated.....Check out Wanda Sykes HBO special if you want to laugh your arse off.....nothing is more pathetic than a grown ass man giving himself a nickname.....WVU should be 6-1 rolling into Tampa in a few weeks to beat down the Bulls.....this Twitter phenomenon is fascinating.....Congrats to the USA Presidents Cup team, what a clinic by Tiger.....73 days until Christmas???? Vernon police said they arrested a man who was dressed as a ninja and waving <span class="blsp-spelling-error" id="SPELLING_ERROR_12">nunchu cks</span> while yelling about wanting to beat up U.S. Sen. Joe Lieberman. The man, 30, was charged Sunday with breach of peace. Police said he was brought to <span class="blsp-spelling-error" id="SPELLING_ERROR_13">Rockvi lle</span> General Hospital for a psychiatric evaluation and later released.<p> </p><br /> Authorities said they received several emergency calls about the man, who witnesses say was standing at the corner of Route 83 and Regan Road at about 11 a.m.<p> </p><br /> Officers said they pulled out bean bag and <span class="blsp-spelling-error" id="SPELLING_ERROR_14">taser< /span> guns, and the man became polite and cooperative.<p> </p><br /> The man couldn't be reached Monday. Indian Coconut-Chicken Curry
Serves 6
1/4 cup vegetable oil
1 large onion, thinly sliced
4 teaspoon finely chopped garlic
4 teaspoon finely chopped ginger
2 tablespoon ground coriander
2 teaspoon ground cumin
1/4 teaspoon turmeric
1/2 teaspoon cayenne pepper, or to taste
1/4 teaspoon freshly cracked black pepper, or to taste
1 1/2 teaspoons kosher salt
2 medium tomatoes, chopped
1/2 cup chicken stock
2 pounds boneless chicken, cut into 1 1/2-inch pieces
1/2 cup unsweetened coconut milk
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/3 cup chopped cilantro, for garnish (optional)
Steamed basmati rice, for serving
In a Dutch oven or enameled cast-iron casserole, heat oil, then add onion and cook until nicely browned around the edges, about 7 minutes. Add garlic and ginger and cook for 1 minute. Add coriander, cumin, turmeric, cayenne, and black pepper and stir for 1 minute. Add salt, tomatoes, and chicken stock and cook over medium-low heat, stirring constantly, until the tomatoes are softened. Add chicken and simmer uncovered, stirring occasionally, for 15 minutes.
Add coconut milk and simmer partially covered for another 15 minutes, or until the sauce thickens and the chicken is cooked. Add cinnamon and cloves and simmer another minute. Remove from heat and garnish with cilantro. Serve with steamed basmati rice.
