Delicious Crispy Dosa

Hi everybody,hope you read my previous blog about making the rice based batter for Indian breakfast.Now with the fermented batter in hand, you can make varieties of breakfast.
Dosa is my favourite.It is similar to pancake but on the salty side and more crispy.
It is not necessary that you should have an Indian dosa making pan/griddle.I would personally recommend the Electric Griddle used for making pancakes.It comes so good in the electric griddle that anybody reading this can make it without any change in taste of the original recipe super easily.[As long as your batter is good the rest is not a problem].
You need:
-The fermented rice based batter[http://www.orble.com/original-south-indian-dosa-batter-
recipe/ -this is the link]The consistency of the batter should be a little thick compared to
pancake mix.
-oil[veg/olive/corn]-just enough to drizzle on the top
-dosa making pan/electric griddle
-stainless steel soup ladle/wooden spoon
Steps of making dosa:
1.Heat the griddle/pan to 350 degrees/ in a medium-high flame respectively.
2.If you are using a griddle the pilot light should go off/if using a pan just spinkle some water
and see that it sizzles well.This is the right temperature to pour the batter.
3.Just like making a pancake,pour a ladle full of the batter in the center of the pan and with
the base of the ladle start swirling in circles, spreading the batter in to a thin layer.[In a big
electric griddle you can make two dosas at a time and make sure you pour the batter in
the center].
4.Drizzle just a teaspoon of oil[for kids you can add butter ] all over and leave it cook for
about a minute or till you see the dosa browning inbetween the swirls.The edges should
almost be raised making it easy to flip.
5.Flip the dosa and let it cook the other side too for a minute.If you want to make it more
crispy flip it again and leave it for another minute.
Your crispy dosa is ready to serve.
Tips for making dosa varieties:
-if your dosa is not crispy/cannot swirl the batter in to thin circle -then you have made
UTHAPPAM,which is also a variety of dosa except that it will be soft and not crispy.
-If you add coarsely chopped onions[red/sweet] on top of the swirled batter,do the flipping-
then you are ready with onion dosa.If you are not confident of flipping with the onions,just
fold it and then flip it over to cook evenly on both sides.
-If you want to make it more healthy,especially for kids-add some shredded carrots,finely
chopped onions,coriander leaves,powdered oats and make it in all fun shapes[stars,Mickey
mouse head etc].Drizzle some melted butter or roll it with peanut butter and serve.
-Two cups of rice batter[fermented/unfermented i.e., fresh batter] with one cup of
powdered oats and wheat mixture with some salt makes it really healthy and tastes good
too.
