Hummus (Chickpea Dip)

Hummus has been a Middle Eastern and Greek favourite for centuries. It is usually served as part of a meze platter as an entrée.
1 can chickpeas, well drained
2 tablespoons Tahini (A sesame seed paste, easily found in your local supermarket)
2 cloves of garlic
Juice of 1 medium-sized lemon
Parsley
50-100ml Extra Virgin olive oil
Salt to taste
Optional
Paprika or chilli powder
1. Combine all ingredients in a food processor and blend into a smooth, creamy puree.
2. Add the olive oil a little at a time. It is the oil that gives this dip its taste and correct consistency. You might think you’re adding a lot of it, but trust me, it’s good for you.
3. Serve with some organic flatbread and/or carrot sticks.
Hummus is also great as a spread on sandwiches, as a dressing for falafels, an accompaniment to grilled chicken and vegetables or to add richness to a stew.

Hope you enjoy it, I always have hummus in my fridge. You can make a big batch and then just freeze it.
