How to Cook Garden Fresh Pinto Beans in an Unusual Way
July 17th 2009 21:43
We all know about garden fresh green beans, Italian style green beans, Kentucky Wonder beans, Blue Lake green beans...you get the picture.
Most people do not realize that the most flavorful green bean in the garden is the pinto.
If you love garden fresh pinto beans and you want to cook them in an unusual way, try picking them before they mature, snap and string them, then cook the fresh pintos like you would cook any other green bean.
Ingredients:
* Fresh green pintos from the garden
* 3 strips of bacon
* 1/8 cup of cooking oil
* salt to taste
The first step to preparing your garden fresh snapped pinto beans is to thoroughly wash the green pintos.
Place the fresh green pinto pods into a large bowl, or your sink will work just as well. Add plenty of cool water and swish the fresh pintos around in the water.
Remove the fresh pintos from the water and place into a clean bowl.
Rinse all of the dirt and grit from the first container, and repeat the process until no grit remains in the bottom of the bowl or sink after washing the fresh pinto beans.
Next, you must string the green pintos. To do this you gently snap off one end of the fresh pinto and pull the string down the entire length of the green bean. Then snap off the other end and repeat the process on the other side of the fresh pinto.
Snap each garden fresh pinto into two or three small pieces, depending on the length of the green pinto bean.
In a large stew pot, bring two quarts of water to a boil. Add the garden fresh snapped pinto beans and the bacon. Boil for about an hour, or until the fresh snapped pintos turn a dark green color and start to come apart.
Add the cooking oil and salt to taste.
