I am an avid gardener, so during this time of the year, I'm extremely busy. There is no time for much of anything. Cooking is no exception. I like a quick and easy meal to serve my family. Hamburger vegetable soup is perfect. Hamburger vegetable soup is quick, easy and inexpensive. Especially if you use your garden fresh vegetables!
HAMBURGER VEGETABLE SOUP
2 pounds hamburger meat
1 1/2 cups pealed tomatoes cut into chunks
1/2 cup sliced fresh carrots
1/2 cup sliced celery
1/2 cup fresh corn (cut from cob)
3 new potatoes (diced)
1/2 cup cut green beans
3/4 cup diced onion
1 bell pepper diced
1/2 cup noodles (your choice)
1 teaspoon garlic powder
salt to taste
Brown the hamburger meat. Try to keep it in bite sized chunks. Drain most of the fat, leave a little of the fat drippings for flavor.
Place the hamburger meat into a large stew pot. Add 6 cups of water. Bring to a boil over medium heat. Add the tomatoes, carrots, celery, corn, green beans and garlic powder. Boil for 20 minutes, stirring occasionally.
Add the potatoes, onion, bell pepper and noodles. Add a little water if necessary. Boil for an additional 15 minutes or until vegetables are tender and the noodles are done. Salt to taste!
This hamburger vegetable soup can also be prepared in the crock pot. Brown your hamburger meat and put into the slow cooker with all of the other ingredients. Cook for about 3 hours and enjoy!
