We have even competed as a family in local iron chef events and BBQ competitions and have won because of our open minded approach to food in general.

The week in review Aug 20-28

Hey all,

Sorry it has been so long since I have written on my blog I will get back to it now.  We had some growing pains and adjustments to make.  We are hosting an exchange student and we had to integrate him into our; home, family, lifestyle, and get him enrolled in school etc… 
Any way here is a summary of last week’s meals.

Saturday Aug 20, was a long and busy day with final preparations for the arrival of our exchange student.  We ate on the fly thus not having the luxury of having a family meal – we met our student at the airport and brought him home around 930 Saturday night we had not had dinner yet and everyone was a little hungry.  We had anticipated this and we had thawed a chicken so I did what I thought best, I dispatched the chicken into several small pieces, dredged them in seasoned flour and deep fried them to golden brown perfection and then just to make sure they were fully cooked they were placed into the pre heated oven for 15 minutes.  All the cook and prep time were used to get to know our student.  It was approximately 1115 that evening before we ate but guess what even thou it was just deep fried chicken with no sides we made it a family meal by taking time out finally from out unusually busy day to sit down as a family of 5 plus 1 and invited our intentions and thanksgiving for what we have and are blessed with and gave the first glimpse to our student of what our expectations were by having you got it our first Family Meal with our new family member.

Sunday Aug 21, today was a much calmer day (sort of anyway) we got up and woke our student up and had him attend church with us (we had a new priest to welcome) so after church we returned home and made breakfast/brunch – waffles and fried chicken from the night before – we had see this on TV many times on travel, food network and the food channel but never tried it I am amazed at how the flavors of each item work with the other who would have thought (well somebody did) genius idea everyone raved on how good they were together and when you have 5 males and 1 female that all agree that the meal works and is very good you know what you have?  That’s right you have a great Family meal.  J

Sunday night’s dinner was a simple dish pork ribs fried in a skillet lightly seasoned with salt and pepper and cooked to a beautiful mahogany color and the taste was pure pork heaven, you throw in a pot of lightly seasoned chili beans and some steamed veggies and yes you have a high quality fiber enriched taste of the edge of heaven.  Now our student is not accustomed to our ways where we have pinto beans well where he is from its not a staple on their plate as a matter of a fact he said he had not eat beans before so he was introduced to the southern lifestyle and he enjoyed them and when you combine a new edition to the family and they take kindly to your ways however they may be like we always pray weather we are at home or in a public place it is always right to give thanks for the blessings in which we receive and for me my friends that makes for an excellent Family Meal.

Monday Aug 22, now you might have guessed that the reason I cooked beans the first day was so we could use them again another day and you are right the reason I made beans was because I had a plan to either do Mexican food (refried beans) or I was going to do chili – well it rained that day so guess what we had I went with the chili – now our exchange student you got to realize they diet is different and chili was not a dish he was aware of so I explained the origin and how it was made and that it was a cross  between, a soup and a stew.  And how it was seasoned, at the table we paid our respects to God and gave thanks as we always do before a meal and then we consumed a bowl of some of the best chili I have made in a bit.  It was perfectly seasoned and the beans from the night before just enhanced the over-all experience.  Our student too enjoyed his first bowl of southern goodness, and a family meal rides again … ye haw …

Tuesday Aug 23, tonight was a foot ball scrimmage and a school PTO meeting/open house.  The family did manage to all get home around 9pm and I ravaged the fridge to find something worthy of eating, I found a chub of ground beef and I had a half pound of sausage.  So I checked the cabinet and found some bread crumbs what can you do with ground meat and bread crumbs *** Ah ha I got it.  Meatballs! I mixed up the meat and bread crumbs seasoned them up with a little onion and garlic salt and pepper and a little basil and oregano some cumin and an egg to bind it all together.  These were not the sauced up kind you put in pasta and not the gravy covered Swedish style meatballs either.  More like a meatloaf meatball I rolled ¼ meat balls up and baked them till they were done cooled them down and served them with a BBQ sauce with fresh carrots and celery with dips, and a couple of warmed tortillas with cheese melted on them.  This was a stab in the dark of a meal but it turned out pretty tasty and we have some left over for tomorrow night’s meal spaghetti and meat balls.  And when you have good food and a great family to share it with what do you have that’s right another successful family meal. 

Wednesday Aug 24, football practice, soccer practice, and meetings, as I anticipated a busy evening.  So that idea from last night should work perfectly.  So after a trip to the grocery store by my lovely wife we had the basic essentials to make pasta.  I sautéed half a red onion and some fresh garlic in butter, and then I open a couple of cans of crushed tomato, seasoned it up with thyme, basil, oregano, onion powder, garlic powder, paprika, salt and pepper.  I took out the meatballs from the night before and put them into the sauce to simmer, while I got the pasta cooking and the garlic bread in the oven, I also chopped up a nice salad with shredded carrots.  I got everything finished up and called the family to the kitchen to plate up their dinner we all made our plates and sat down to the table said grace, giving thanks for our family and the opportunity to share our home and lives with those around us.  So everyone ate, to their hearts content leaving nothing to waste the sauce was tangy and spicy and stick to the noodles that were perfectly cooked the meatballs were able to absorb some of the sauce making them better than the night before the bread and salad added just the right balance to finish a sumptuous family meal.

Thursday Aug 25, I was not feeling well I went to bed and didn’t wake till the next day.  That night my wife took the reins and prepared a meal of pork ribs seasoned and brazed to a perfectly fork tender melt in your mouth goodness they had a baked potato and some Normandy vegetables with their meal the best part even thou I was down and out the family did manage to sit back and relax and enjoy a family meal minus 1.

Friday Aug 26, after being down and out the day before I awoke around 12 and got to enjoy my wife’s delicious brazed ribs as a breakfast with an egg and toast.  I went back to bed and slept till 5ish when I work everyone was just getting home from practices and school.  I visited with my wife and recommended that we go out for pizza.  She let the boys know and gave them an option between pizza and Mexican food and they all agreed pizza, we loaded up the van and headed to the best pizza in Fort Smith, Arkansas “Pizza Parlor” on Rogers Avenue.  This place has been around for 40 plus years in the same spot with the same wonderful crust and topping choices we have been coming here for 20 years at least 12 times per year we make a trip in to have pizza with our family and sometimes a group of friends.  The toppings are always superb and the pizza is the best in town.  We have had two exchange students now and the first one said it reminded her of home she was from Germany and she had traveled to Italy and had pizza there and she said it was delicious.  The same with the boy we have staying with us now he loved the thin crust and toppings.   We had ordered 4 large pizzas one was the ever so lovely bacon and cheddar mine and my wife’s favorite, there was a pepperoni and Italian sausage, the little ones preferred, the middle boy asked for a chicken and spinach pizza, and then we got one that was supposed to be pepperoni and half with jalapenos well they forgot the jalapenos and to make up for it they made us a small pepperoni and jalapeno pizza.  As I have said in the past it doesn’t matter if we are at home or out – we always give thanks for the gifts that we receive everyday and thank God for the opportunities that we have and after that we eat and share our day and things to come with each other at the table of plenty with the family and enjoying yet again another wonderful Family Meal.

Saturday Aug 27, what a beautiful morning, we had been asked to help a friend do a Jr High tailgate party, actually this was the 4th year in a row that we had done this and they have always done something so anyway our friend works for a very reputable poultry industry packaging plant as one of the division chiefs and has a massive trailer that is designed to feed thousands – so he drags this trailer and another small one  now I say small but here is what we cooked – we cooked 240 hamburgers and 100 lbs of chicken wings – I don’t know about you all but that’s a lot of food for 5 guys to cook and feed 300 or more people, so we cooked fed and guess what they said grace and gave thanks and then they all ate and filled their bellies with the best burgers and wings in town. 

That evening we had a small party at our house a pool party none the less.  It was so my wife could take care of some business and so the boys could socialize and let our exchange student meet some of our friends.  So it ended up being like 26 people 8 adults and the rest were teens and 2 little ones - at the pool party some neighbors came and my wife’s business contacts joined us with their family.  I grilled our hamburgers and hot dogs and their happened to be some left over wings from the tailgate party that we brought home and we used them with our giant group of people the guests all chipped in with sides a beans and rice dish and watermelon for desert and we made a homemade shells and cheese casserole and then another guest brought cookies and yet another introduced us to a nice bottle of Riesling wine.  To pay homage before we broke bread I asked one our guests to give thanks because she is a youth minister we all stood and gave praise and blessings and then we consumed the mass amounts of food that were there for the eating.  And we sat as a community of friends enjoying the company and collaborating on exchange programs the food, day’s events and experiences, and the fact that we were all there together I can say it was a successful and enjoyable -- EXTENDED -- family meal.

Sunday Aug 28, brunch was a culmination of the weeks meals which I like to call leftoverpalooza and I made pancakes.  It was tasty and we all sat as a family blessed our food and each other and enjoyed our food as a collective group discussed the day’s events and weeks expectations.

Dinner well the night before a couple of folks could not make the party so my wife invited them for the next evening this evening was a much smaller gathering with very few in attendance there were our 6 and they brought 4 and we had one straggler guest it was a business slash family event so they arrived my wife and her guests took care of their business while I had the boys all out in the pool and I cooked burgers and hotdogs and warmed some more of those delectable wings and we pulled out what was left of the homemade shells and cheese which was a lot, the other family brought some marinated veggies in like an Italian salad dressing “vinegar and oil” it was very good they also brought a little desert a toffee & chocolate chip cookie bites plate very tasty.  I was feeling pretty good so I asked my son who wants to be youth leader at church to lead in the giving of thanks and he blessed the meal and those in attendance and we proceeded to plate our food and enjoy the most basic of basic of meals with a very nice group of people – we enjoyed there company. 

There really is nothing that can come between a group and their thanks and when you have a group at your home they are family and you can always enjoy a Family meal I suggest you take the time at least once or twice a week.  I just gave you a glimpse into our week and we didn’t miss out, every day there was a family meal.

Cookies please

Cookies please

On Sunday I made a batch of homemade peanut butter cookies so the kids would have cookies for the boys lunches, or at least a homemade treat after a great meal, either way it’s a win-win for me because I love peanut butter cookies.  I whipped up this batch made 2 dozen and popped the rest of the dough in the fridge.  Well I have been making a dozen peanut butter cookies every night this week so far and last night I got the preverbal dad can you make more cookies please and of course my lovely wife chimes in and she doesn’t want peanut butter cookies tonight she wants her favorite “no-bake cookies” I go into preparation mode and whip up a batch of no-bake cookies.  Which by the way were probably some of the best ones I have ever whipped up, so everyone has 4 or 5 each of these cookies and guess what I will probably have to make some more tonight, who would have thought that once I do a nice thing for the family then its expected – not that I mind or anything I am a king in the kitchen whether it be a complex meal preparation or quick fix leftovers or even a couple of batches of homemade cookies.  I am up for the task – so bring it on family – give me what you want and I will go forth and prepare…

Wing King -and- Leftovers

Well the morning was pretty uneventful.  We dropped the older boys off at High School the seniors last first day of school and the sophomores first day of High School.  Jen and I decided to do some shopping.  We embarked upon our journey and had a really nice morning.  We reached a point in the day “Lunch time” that we decided we were going to eat at Arby’s so we headed down the road only to see out of the corner of our eye a little place called the “Wing King” now we knew of this place because they guy has tried 2 other times in 2 other locations to wow the masses with flavored deep Fried chicken wings.  Well unfortunately for him the public didn’t see things the way he had envisioned so he would close for a couple of years and try again – I always say “if at first you don’t succeed try, try again”.  I was excited to see that they were giving it another go – because there was another place in town “WingStop” (A chain restaurant) had come to town and that place is always hopping (good food, don’t get me wrong) but I believe that in a small community like ours that we should support local folks in their endeavors. 

The Wings at the “Wing King” I thought were excellent I like to think of myself as a wing connoisseur, my wife and I have tried wings almost everywhere we go at least once.  And up till today I thought “WingStop” had the market.  Until the original the one and only “Wing King” opened back up.  They have something no one else has, they have heart – a chain can make a kick butt wing but it takes someone who truly cares to make a wing that pops.  And let me tell you the wings at the “Wing King” are the real deal the name “Wing King” fits.  They are the kings of the wings.  We have only tried the Regular hot which was sweet, spicy and perfectly cooked to deep fried perfection, we had the Garlic parmesan saturated with a salty pungent garlic sauce and covered with parmesan sprinkled with a little parsley delicious, we also had a raspberry chipotle, I’m not a big raspberry person as a matter of fact I don’t even like raspberry anything but these wings made me appreciate what one could do with raspberries and a nice spicy pepper, but I think my favorite of the day was the Greek seasoned wings, I love the seasonings they used and the simplicity of the preparation, they were so flavorful and enjoyable – we got the 35 wings an order of very good fries and a couple of Dad’s Root beers.  It was a wonderful lunch with my beautiful wife and the best part was we had plenty of leftovers for dinner as well. 

We got home from out outing and picked the youngest up from school.  The two older boys had football practice till 6 pm.  So we are all home and the boys are asking what’s for dinner I told them leftovers, you should have heard the sad, oh no, sighs.  Anyway I pulled out the roasted chicken from the night before, the wings from lunch, the fries from lunch made a batch sweet potato fries for Jen and a few more homemade fries for all of us boys, tossed some Normandy Veggies into the microwave and we bellied up to the table said grace, and dug in to a fabulous leftover meal – everyone ate we talked about the day’s events and the weeks plans – we learned that our exchange student would be arriving on Saturday so there are plans in the making.   We enjoyed yet another fantastic family together.

Better late than never

Better late than never

So Tuesday was a busy day – day two for the youngest in school (already had some homework) the day before the older boys started and one needed jeans so he and mom went out to find him some.  Anyway long story short we had some unexpected guests over around the time I would have started dinner and they stayed a little later than we had planned but it was a nice visit and necessary too.  So, dinner was a little later than expected, but as I always say “better late than never”.  I had thawed a whole chicken and it was ready to quarter up and shove into the oven.  So I got us an oven roasted chicken on and instead of getting crazy with potatoes or rice I opted to just go with the Normandy veggies again – I know boring right well it was an excellent choice for the roasted chicken, which by the way was perfectly cooked.   So anyway Jen decided it was not flavorful enough she had me experiment a while back with a BBQ grilled chicken she insisted that I make a peanut butter sauce and put on hers which I obliged and she loved it.  So she wanted it on her roasted chicken that night and again she loves peanut butter so it was as perfect of a meal as one can get we might have had it late but we had dinner as a family with our normal giving thanks for the meal – we enjoyed our conversation for the day and the expectations of the next day and we once again enjoyed another wonderful Family meal

Today our youngest child started school it was the last first day of elementary school for him the older boys had football they don’t start till Wednesday so Jen and I dropped the little man off at school we attended mass and then we jetted home to continue to get things ready as we anticipate the arrival of our exchange student in the not so distant future.   We also made a trip out to gather some more needs for the house.  So after all was said and done last night for dinner we had made a decision to have country style pork ribs, I took the ribs and portioned them out it made 6 pieces approximately 4 inches long they were 2.5 inches wide and 1.5 inches thick and then I cut them first I sliced them in half lengthwise and then I sliced them into half again length wise making 4X1.25X.75 roughly pieces.  I then seasoned them and placed them in a baking dish with a thin layer of bacon fat on the bottom of the pan.  And baked these mini ribs till they were fork tender pulled them out and I had one of the boys make a pot or rice and warm some of that Normandy Blend of veggies broccoli, cauliflower, carrots, and squash.  We fixed our plates made out way to the dining table and sat we prayed and talked about the youngest ones first day of school, football practice and what we had done that day to get the house ready for our guest, and all the other exciting things that the day had shown us.  There is really no way to compare what it means to be able to sit and talk to your children and enjoy a meal – I believe truly even a bad meal as long as it is at a spot where you can talk that’s what makes the Family meal time so special.

Sunday breakfast

Sunday was a pretty nice day we woke up and got ready and went to church to say farewell to our departing priest, he was transferred to a church that needed his dynamics more.   So we enjoyed our morning at church when we arrived home the family was ready for some breakfast.  They challenged me to make biscuits and a southern favorite Chocolate Gravy.   I cheated a little bit on the biscuits (Bisquick) I handed that job off to my oldest son he whipped them right up and in less than 10 minutes we had dough.  The then floured his board and rolled his dough out to a ½ inch.   He cut them out got them on cookie sheets and then popped them in the oven.  While I started to make the gravy, now chocolate gravy is not too much different than regular gravy.   Chocolate gravy starts with a cup of butter melted, you add a cup of flour or just less and make a roux you can add the chocolate like 2 large table spoons of powdered chocolate you know the baking king, you want it somewhat thick but not too thick, then you dump in your cup of sugar, after that you add water and milk and cook on medium heat till the gravy is at your optimal thickness if it’s not thickening you may need to add a little cornstarch and water mixture make sure you keep stirring the gravy so it doesn’t stick to the bottom.  So we had some sausage – I patted out 5 patties and then we headed to the table – we gave thanks for – what our lord had provided, and we sat and enjoyed a true southern treat.  But most of all we had a Family Meal.

Saturday evening

Saturday brought something that was more familiar, during the day Jen went out to purchase food for the next couple of weeks. In her journey to purchase our meals she decided that she wanted to have some Country Style pork ribs which by the way are an excellent choice by the way. So for dinner Saturday night I decided that Fried pork ribs was in order. I seasoned the ribs with salt and pepper and cooked them in the pork fat from the bacon a couple of days back. I also baked a few potatoes to add in the as the starch 4 regular potatoes and 1 sweet potato for Jen. She had also picked up a package of frozen veggies a Normandy Blend which had cauliflower, broccoli, carrots and squash. Which I put in a glass bowl and put it into the microwave with a couple of teaspoons of water a little salt and pepper. So the ribs were cooked to perfection and had a beautiful a rich caramel color to each one, they were so easy to cut and had such a wonderful flavor. The potatoes were perfect and of course everyone was able to put the toppings of their choice, butter salt, pepper and cheese for anyone who needed it. The frozen veggie which are normally not very good and can easily be over cooked – this bowl of veggies was very good. So we sat down at our table and we had a great conversation because family is what makes us – so we enjoyed another fabulous Cabalar Family meal.

Friday's meal

On Friday Night we kind of went off course however the Family meal still happened. See one of the boys had a free meal from Chick-Fil-a which incidentally is one of the coolest places to eat. The food is great and the service is always awesome and the owners well guess what to be an owner of a Chick-Fil-a you have to have some family values. Chick-Fil-a is one of the only business that I know of that when you purchase the franchise you have to agree to not open on Sundays, for me even though I cant get Chick-Fil-a on Sundays I'm okay with that because I would take a Sunday at home with the family on a Sunday after church much better than a Sunday at the Chick-Fil-A. I really respect the franchise for making that an all important part of the business. Respect and love to the Chick-Fil-A Family. So we got our kids free meal and of course it was after an afternoon of school shopping, and everyone was tired and hungry so we decided to all grab a Chick-Fil-a sandwich and we traveled home made our plates and paid homage with a prayer and smacked down on our meal together as a Cabalar Family so you could say even though out of character we still enjoyed a Cabalar Family meal.

Fried chicken

Now I’m not going to lie, I’m not supposed to be eating fried foods.  But sometimes it’s just easy to do and it is comforting and familiar to all the family.  So last night I conjured up a batch of deep chicken and wait for it – hand cut French Fries.  So let me tell you how all this came about, about a year ago I saw my Dr.  he said to me “a man of my age needs to watch what he eats and cut back on the fats and fried foods as a matter of a fact he said don’t eat anymore fried foods they are bad for me.”  Little did he know that the day before I saw him we had just invested in a brand new deep fryer, I know right!  What are the odds that we get a new fryer and I am directed to not eat any more fried foods?  Any way as you can see I don’t follow the recommendation to the fullest but most of the time I do because it’s the smartest way to live a lot longer. 
So anyway last night we had deep fried chicken.  The chicken was dredged in seasoned white flour that my oldest son put together – a cup and a half of flour “guesstimated” he said, he added salt, pepper, garlic powder and a little bit of paprika.  I got the fries cut up and dropped them into a 375 degree deep fryer, and par cooked (about 2/3 of the way cooked) them so I could crisp them after the chicken was ready.   Then I dropped in the chicken – no if you have never deep fried chicken you have to know that it locks the flavor and juiciness into the chicken and it just makes it taste so much better.  I normally pan fry chicken when I we want fried chicken but last night it just made sense to deep fry it.  It actually cooks a little faster I think and it gets a little crisper as well as being juicier so it was a win – win for the family.  So the chicken was finished I put it on a cookie sheet and stuck it in the oven for 15 min on 350 to keep it warm, while I finished the fries.  When they fries were finished we ate our fried food paradise Delicious hand dredged deep fried chicken and hand cur French fries I think everyone was please with the meal and we had an extra guest my God son he had come in several times and asked what smelled so good – so he said to me “I may have to eat several of those”  I think everyone was please and as always we sat as a family and had discussion on our day football, plans for the week ahead with school, and we also talked about our foreign exchange student that will be coming to be part of our family for a year.  Once again we had a successful Cabalar Family Meal,

Bacon

Bacon,
Dear Bacon, I love you, you are the only food on earth I would eat every day.  I know you’re not good for me – you may even kill me someday but I can’t help it.  You are so perfectly salty and tasty.  I adore the way you are always crisp and rich in that red to mahogany color.  I love you thin, I love you thick and I love you every size in between.  I love you with eggs, on burgers, pizza, potatoes and salad, I love you when you wrapped a around a filet, wrapped around asparagus too, or even wrapped around a deep fried sausage – I love you, I love you.  I love you dipped in chocolate and used to make beans, I love you all the time I love you in my dreams.   I love you when you touch my lips I know it going to be good – you have never let me down, not once I don’t think you ever could.  I love it when you’re special like in pancake, in a donut, or stuffed in a croissant, or hiding in a sandwich, I love you when you are candied or stuffed in to an olive.  I love that wrapped around jalapenos, shrimp and scallops or stuffed in to them too…  You are famous, known the world over, I truly do love you.  I love the Fare shirts, the gum, the ads and the world for embracing my favorite food on the planet “Bacon I love you in the morning and I love you in the evening, I love you all day long.” Please don’t ever leave me because that would just be wrong”!

Now I can’t say that Sunday’s dinner was anything special but it certainly wasn’t ordinary either.  After a day of working around the house trying to get things in order, we decided dinner should be simple.  It really doesn’t get much any easier than tacos or a taco salad – so Jen took out some ground beef, thawed it out – I got up browned it and then something told me to try something different.  I took dried onion pieces, powdered garlic, powdered cumin, a pinch of basil, 2 pinches of oregano, a hint of marjoram, and some pre mixed taco seasoning put it all in a bowl with 4 cubes of beef bouillon and added a little water to hydrate the onion.   After it hydrated a little bit I added it to the ground beef and then a hit of pepper and salt – and oh my goodness it was amazing the flavor burst through and just made the ground beef perfect.  Note to self (hydrate seasonings to extract more flavor)  So then I tossed some meat in 10 flour tortillas and tossed them on the griddle and browned the outsides of the tortillas chopped up some iceberg lettuce and  got the grated cheddar out added some of my very own home made salsa and a dash of taco bell taco sauce.  We all plated up Jen and Justin wanted salad.  So we got our food and this is a little out of character but we watched T.V. and ate in the living room – but we did it together after we prayed and then we enjoyed our program and our family being together for another Family meal.

Ice Cream Social
Sunday afternoon – after our lovely breakfast we went into full clean up mode.  We have a foreign exchange student suppose to be coming to stay with us for the academic year and we have tons of things to get done before he gets here.  Rooms to clean closets to move and a whole bunch of other stuff not to mention that school started this week for all our boys.  So Sunday afternoon – our church has an annual event that is called an ice cream social our departing priest and a group of men from the men’s club the Holy Name Society – they host and serve the ice cream.  So we decided to make an appearance and we all dug into a bowl or two of ice cream which who can go wrong with chocolate, vanilla, strawberry, black walnut, or rocky road.  And they there are all the toppings you could imagine form candy, to nuts, to crumbles, and syrups and if you are feeling particularly into floats you could have orange floats, coke floats, or my personal favorite Root beer floats.  It was very nice and we got to visit with parishioners that we don’t get to see that often part of our church family – so I guess you could say we had another wonderful Family Meal.

When I got home from work yesterday – Jen and I were trying to decide what we were having for dinner.  We were going to be one kid short for dinner as Justin had plans to meet friends at Cheddars for a surprise birthday party.  So we decided that when we took him we would run by Wal-Mart and grab some thick sliced bacon and a head of lettuce and go home and make BLTs we had a tomato and bread (sounded like a good idea to me).  We got home opened the bacon placed it on a cookie sheet and started the oven at about 500 degrees almost to broil, placed it in the over and waited for it to cook down and render some of the fat from the salty, delicious, sumptuous thick sliced bacon.  I like to cook bacon in the over because it seems to cook more evenly the trick is when it is about a ¼ done you have to drain the fat off into a cup (save it for later for beans or some other need that you may want a little bacon flavor to sauté something)  then when the bacon is about ½ to 2/3 done you need to flip it and drain fat again if need be then continue to cook to your desired crispness don’t leave it alone thou or it may burn drain fat as it renders from the bacon.  Once the bacon was finished I had Joey make some toast – and we assembled our BLTs, nicely browned Whole Wheat toast with just a hint of mustard lined with several crisp pieces of iceberg lettuce, topped with a garden fresh tomato lightly salted and peppered then a layer of crispy delicious bacon 4-6 delectable slices of the thick juicy tasty goodness finished off with another pieces of Whole wheat toast and served with a juicy dill pickle and an ice cold beer.  Now I don’t know about you but I’m full again just thinking about and describing it.   The 4 of us sat down and prayed and enjoyed once again The Family Meal.

We are not only creating meals for our family on a regular schedule we are creating memories and building a strong family.  By sitting down each evening and eating together we have a grand opportunity to talk to our children.  As I said before we have busy schedules and the boys are growing up, so all these years spent fostering this family meal concept has really paid off.  Even if one of the boys is not present the rest of the family will sit together and enjoy a meal, saving a portion for the missing person.  Our rules are simple we all sit, we pray and then we eat.  There are no distractions; no TVs, no radios, just the family and what brings everyone together “FOOD”. 
It is not always the same o’, same o’, it’s not meat and potatoes every time and it’s not fried chicken with mashed potatoes and gravy, or beans and corn bread.  On the other hand sometimes it is.  We experiment with all kinds of foods. 
The wonderment that takes place when the boys have a friend over that doesn’t have the opportunity to join in on a family meal at home.   It warms our hearts, the humble and excitement when a kid sits at our table and breaks bread with us is very special.  We have several of the boy’s friends that can’t wait to come back over for dinner or a party.  Some of the kids have never gotten outside of their food comfort zone, it allows Jennifer and I feel like ambassadors of international foods.  These kids have had opportunities to explore their pallets and flavors that they may not otherwise have had the opportunity to try – where as normally they consume burgers, spaghetti, chili, etc… basic foods that we all love but there is so much more out there to try.  So many cultures so many diverse combinations.  A family could spend a lifetime and never try everything there is to try however we are going to give it a shot.

I love to cook and prepare meals. My family and I also enjoy everyday entertaining. We often make a production from little or nothing, somehow it always seems to turn out just right. It often amazes me when we feed a large group with a package of ground beef - homemade hamburger buns and whatever else is in the cabinet. We have been fortunate in ou culinary experiments - we have combined flavors and cultures really tapping into new exciting dishes and amazing our family and friends. I have made my very own turduckin for those who don't know that's a chicken stuffed in a duck stuffed in a turkey (it's a Cajun thing). I have my very own version of a fatty - that is three types of ground meat smoked and seasoned and then wrapped in a bacon weave. I have created my very own spice rub and BBQ sauce to use in competitions. I have learned to roll sushi. I have also been working with sticky rice and Asian BBQ. There is a rich Hispanic food back ground and Italian roots in our typical menu. When we get an opportunity we hit the Hispanic stores, the Asian markets, and the gourmet foods stores. Recently I have been dabbling in Indian cuisine with naan and yandori breads, Babbaganouch, hummas and roasted lamb with a meditarain salad and basmatti rice... Who would have know it would be so tasty - I learned to cook it all my self. There is so much more to tell I hope you subscribe So you can journey with us.

I remember when I was just little kid – at grandma and grandpas house.  Me and my little brother, I was 6 and my brother was 1 and we helped grandma and grandpa prepare Thanksgiving dinner.  I can remember how much fun it was and having a blast mixing potatoes and basting the turkey and pouring the corn and peas into the pans so they could be warmed through. 
My grandmother was a catering teacher when she was younger and she worked in several different parts of the restaurant business in her 80 years.  She taught me so many different things – things I wish now I could remember because there were something’s I remember liking and there were a whole lot I remember hating. 
There were three things that I just could not stand:
Once when I was 4 or 5 years old we lived in Tulsa Ok, my mom and I and my brothers dad.  I was forced to eat spinach, I can remember losing every ounce of that spinach that day and not eating it again until many, years later… 
Another dish that turned out to be something of a fiasco I remember being at grandma’s house and grandpa making me eat meatloaf, now today I like meatloaf but when you are little and someone makes you eat something that doesn’t smell good or taste good guess what –it aint staying down. 
The dish that remains my nemesis is the Sheppard’s pie, a bowl of mashed potatoes with ground meat, carrots, peas and corn topped with more mashed potatoes.  To this day I still cannot imagine eating this dish.  I can enjoy each component separately, but when they are all together they are not appetizing to me.  Maybe after reading this blog entry back I will brave the journey to making it and learning to enjoy a food that has long been my enemy.  We will see…

Here in the south if you have been keeping up with the weather'. It's been HOT - now I never claimed to be a genius or anything but when it's 110 degrees out side ho wants to eat... Ok so I saw my dr a few weeks ago now and he said I had high cholesterol "great" no fried food no fatty foods and hey you need to lose some weight.... We have 3 growing boys at home - they like to eat anything and everything. Ok well my wife saw the dr yesterday and he told her she may have a dairy allergy... And she could stand to loose a little weight. Again restrictions "no dairy for 7 days" many of the meals we consume will have one form or another of dairy product. So now what do we do. Well let me tell you what we had last night for supper instead offside chicken we had oven roasted chicken and Garlic mashed potatoes - now imagine this it's 9 pm -103 degrees out side and we have the oven on baking chicken who does that? Anyway it was beautifully crusted seasoned to perfection and juicy all te way to bone it melted in my mouth, the potatoes without milk or cream just a little touch of margarine and several cloves of garlic made for a tantalizing scoop of creamy mouth watering garlic punching mashed pototes and we also had a nibblets of corn on the cob... Now I'm not saying don't crank your ovens up or do crank your ovens up - I'm just saying when we sat down prayed and broke bread didn't matter that it was 100 outside all that mattered was my wife and boys all sat and we enjoyed another wonderful family meal.
