Tonight's dinner the oh so delish fajita.
I can pass you on a recipe of this delight, but first I must tell you of it's virtues. The hot and spiciness is an instant wnner for me - thanks to cayenne pepper. But the real winner is the fact that they are the perfect TV dinner.
They're the perfect any occassion feast to tell you the truth, and as messy as they are, there's nothing else that says fun and sharing like a messy delish fajita.
So here's how it goes:
600gms Chicken breast sliced into bte size pieces
1/4 tsp cayenne pepper (more if you like it hot)
1/2 - 1 tsp paprika
Juice of one lemon
I tin cherry tomatoes (or a punnet of fresh cherry tomatoes)
1 red capsicum chopped
I onion slices
2 cloves garlic finely chopped
Salt and peppoer to taste
To Serve:
1/2 an iceberg lettuce shredded
guocamole
8 fajita wraps toasted
some yoghurt.
Combine the chicken lemon cayenne pepper and paprika and let stand for 5 - 10 mins.
Fry the chicken in a little olive oil, in batches until sealed on a high heat.
Once chicken is sealed use the same pan, add a little more oil and start cooking the onion and garlic on low heat.
Once the onion is clear add the capsicum.
After a few minutes add the cherry tomatoes.
Add the chicken, salt and pepper.
Bring to the boil then simmer until the sauce thickens. (about 10 mins)
Once the sauce is ready and has reduced your main ingredient for fajitas is ready...
TO SERVE:
make wraps with the rest of your serving ingredients and make a good mess
