Easy Casseroles

CHICKEN ENCHILADAS
Ingredients
10 Flour Tortillas
2 Cups Sour Cream
1 Can Cream of Mushroom Soup
4 oz. Goat Cheese, softened
1Cup Cheddar Cheese, shredded
1 Cup Pepper Jack Cheese, shredded
1/2 Cup Milk
1/2 Cup Cilantro, chopped small
1 Small Sweet Onion, diced
4 Boneless, Skinless, Chicken Breasts, cut into small pieces while raw
2 Celery Stalks, chopped small
Instructions
Preheat oven to 350 degrees.
Prepare 9 x 13 inch casserole dish with non-stick spray.
Saute Celery and Onion until tender, over medium heat. Add Chicken pieces and cook until meat turns color. Do not overcook the chicken as it will continue to cook fully in the oven.
In a large bowl, combine the sour cream and mushroom soup. Mix well. Add the cilantro, chicken and vegetable saute, and the cheeses. Combine until well incorporated.
Fill the tortilla shells with 2 tablespoons of the mixture. Roll shells and place in prepared casserole dish.
Add milk to remaining mix. Stir well.
Pour over tortillas Bake uncovered for 45 minutes. Top should be golden brown and sauce bubbling when done.
