Easy Berry Ice-Cream

This is so simple, no-one will know you only took a few minutes!
You will need:
1 500ml tub of plain (Vanilla) ice-cream
500g berries of your choice
Large mixing bowl
Wooden spoon
What to do:
Keep the ice-cream out of the freezer until it has softened, you don’t want it to melt completely, just enough to be able to mix the berries through.
Next, tip the ice-cream into the mixing bowl and mix through the berries, you want it so there is an even spread of the berries. How much you mix it through can be your personal choice, the more you mix, the more colour will come out of the berries and the more they will blend through. You can create beautiful hues by doing this.
After mixing is finished, tip the ice ream mix back into the ice-cream container.
Replace the lid on the ice-cream container and return to the freezer for around 4 hours.
Technical modifications:
You may have some left over Berry Ice-Cream mixutre that won't fit back into the Ice-Cream tub:
With the left overs you can eat it, mix some milk or yoghurt through it and have a milkshake or
place it in a small bowl suitable for freezing.
Use as desired, perhaps a scoop on a plate with a few fresh berries and a mint leave on top
In milkshakes
Accompanied with warmed chocolate pudding or cake
With pancakes or wafers
Or just on it's own.
Light or low fat Ice-Cream can be used and is perhaps a healthier chioce.
Why not substitute the Ice-Cream for low fat Natural Yoghurt. - This too can be frozen.
The best ice-cream I have found for this is the supermarket brand 500ml size. The supermarkets use different suppliers depending on the product. In Australia, the Safeway Home Brand one is nice and creamy.
If you don't like to use plain branded ice-cream, go for a quality one, make sure it's not ice confection, you don't want to be disappointed.
Berries can be either fresh or frozen. Go to your local markets for the freshest ones. If you can't do this, then the frozen ones work just as well and are still full of nutirents and flavour.
