In the Weeds

So my day started out pretty good, until that friendly clock of mine decided to speed up in time.
Get ready people, we are off to the races.
race in time that is!!!!

Monday's are hard anyways, but when your boss shows up the heat is on.
Everybodies stations were torn up, I was stuck in 3rd gear, tried but could'nt get it into 4th or 5th speed.
Steamed off the pasta, cleaned 40 pounds of chicken breast, seasoned and roasted it off in the oven. Need to make some spaghetti sauce, getting my ricotta cheese mixture ready to make the baked ziti. Done, Yes!!!!
Now onto the soups, Turkey and Rice, Roasted Butternut Squash Bisque.
Wow, that Bisque taste good.
Pizza, Pizza gots to make the Pizza's

We are getting closer and closer to show time, I don't think that my salad bar lady is going to make it, wow her station is a mess, she is a mess.
Organize your station lady, organize your station!!!!

This lady grows the weeds, that she stands in.

Unbelievable!!!!

Saturday Re-Fresher Course

Okay, Its been awhile peep

Sometimes, I stand corrected most of the time the foodservice business keeps you very, very busy.
Usually my job is Monday thru Friday, but this week all the chefs and Managers in the company had to take a refresher course this past Saturday.
I have to admit, that even though I had to forego my usual Saturday patterns, I had lots of fun, seeing new and exciting innovations in the culinary field. I got to witness new and old team members within my company, and lastly of course at the end of every refresher course there is a raffle, and this time after eight years of attendance I got to take home the grand prize. Yippeee yay!!!!!!

My lists of exciting details of this once a year saturday meeting included:

Home made bagels - Yes, a chef in my company made homemade bagels for us, they were so yummy. I had Hummus, Cucumber, Tomato and Red Onion on mines. So Good!!!

Sushi - yes an acquired cuisine, but my favorite can eat sushi everyday for the rest of my life

The burritto bar - I did not get to have one of these popular burritto's but the chef is one of the best in the company and everything he prepares is just lovely and awesome. Yeah, I said awesome.

Baked Stuffed Pizza - This is not the name used for this dish, but I cannot remember the proper name. It was a pizza topped with an additional crust on top and all I can say is that it was good. There were other interesting things on that pizza station, to many to list all. I think that if I just rent the chef, who prepared all this food and brought him over to my account, it would be easier.

There were so many other highlights to the meeting, but I am going to stop at the salad bar that was prepared by a genius chef, who incorporated ingredients specifically targeted to various vitamin groups to ensure that you are getting your daily doses of these key elements. Fantastic!!!!

Rosemary, Thyme slowly cooked Roast Beast
Red Bliss Smashed Potates
Roasted Zuchini and Summer Squash
Steamed Broccoli and
Sauteed Sherry Mushrooms
Extra Gravy Please!!!!!

Add that to Italian Sausage and Linguica Subs, Carved pork loin sandwiches, Chicken vegetable soup, Pizza's and more...

Pretty quiet easy day, no caterings and no fires to put out, wish everyday could be like this one.

How we love Monday's

Most Corporate Chefs have the luxury of working Monday thru Friday.
Mondays are the hardest day of the week. This day dictates and sets your flow for the rest of the week.
On any given Monday, you can walk into your account and find that the refrigerator or freezers went down during the weekend. If you check your voicemail then you will find employees calling in sick for work or that one catering that just didn't not make it off and admins. desk before he/she left the office on Friday

A Day in the Life of a Cafe Chef

Our vocabulary is very limited, common words include: Yes, Right Away, No Problem, Next, Thank You, and Sorry for Any Inconviences
