Last week my local grocery store had chicken leg quarters on sale, 39 cents a pound, so of course I bought 15 pounds! I have a deep freezer so I have plenty of storage space. When I got my chicken home, I separated it into individual servings for my meals. The chicken for my chicken and dumplings tonight cost 83 cents.

I decided that I wanted chicken and dumplings for a meal this week so while I was grocery shopping I purchased 4 cans of biscuits, the cheapest brand I could find. This happened to be the store brand, 4 cans for $1.48. These two items of the chicken and canned biscuits are the two main ingredients to my chicken and dumplings.

When I prepare a meal, I like to cook enough for my family to eat for dinner, with enough left over for lunch the next day. If you are not fond of left overs, you might want to make less. Unless of course you have a large family. This recipe will easily serve 8, when a vegetable or two are added for side dishes. If side dishes are omitted, this chicken and dumplings recipe will serve 4.

Chicken and Dumplings Made Easy

2 - 2.5 pounds chicken leg quarters (including skin)
4 cans refrigerated biscuits
dash of dried parsley
salt and pepper to taste

Place the chicken in a large stew pot, with plenty of water to completely cover the chicken. Boil on high heat, until chicken is tender. Add more water if necessary. Remove the chicken from the broth once it has thoroughly cooked, and set aside to cool.

Add the dash of dried parsley to the broth. Open your cans of biscuits and pinch each biscuit in half and drop into the boiling chicken broth. Repeat this process until all biscuits are used. Reduce heat to a slow simmer.

Remove the skin and bones from the cooled chicken and discard. Drop the boneless chicken pieces into the chicken broth and dumplings. Let simmer only until the dumplings are completely cooked. Around 10 minutes or so.

Salt and pepper to taste and enjoy!

This rich, mouth watering chicken and dumpling recipe, that will easily serve 4, was prepared at a total cost of $2.31!
