Chicken and Broccoli Stir Fry with Sesame Teriyaki Noodles and Egg Rolls.
Sorry that I haven't written any new recipes over the last few days. There was a death in the family, so we have been out of town. I am back now and ready to cook! Tonight we are having Chicken and Broccoli Stir Fry with Sesame Teriyaki Noodles and Egg Rolls. This is a little more expensive than normal but after so much McDonald's and fast food, my husband and I deserve it!
I am using boneless, skinless chicken thighs that I found on sale. The chicken was $3.95 for a 3 pound bag which contained 9 thighs. I stocked up! I bought 9 pounds. Anyway, the egg rolls were purchased pre-cooked, so I guess I cheated...but they are delicious and inexpensive. A package of 12 large egg rolls for $5.39, I will only use 6 egg rolls, price $2.70. The Sesame Teriyaki Noodles is a box mix called Simply Asia. It comes with all you need to prepare authentic Asian noodles, which are absolutely delicious...$1.75.
Chicken and Broccoli Stir Fry
4 boneless chicken thighs $2.00
1 cup frozen broccoli flowerettes .79 (1/2 bag)
1 can water chestnuts (drained) .72
1 can bamboo shoots (drained) .72
1 small onion julieanned .25
3 carrots julieanned .25
1 package stir-fry seasoning mix .78
2 tablespoons cooking oil .20
Total $5.71.
Blend the stir-fry seasoning according to package directions. Set aside.
Put the cooking oil in a non stick skillet and place on medium heat. Add the chicken pieces and stir fry until thoroughly cooked, about 12-15 minutes. Add broccoli, water chestnuts, bamboo shoots, onion and carrots. Stir fry until desired tenderness is achieved (I like my vegetables still a little crisp). Add the sauce mix and cook until it thickens, about 1 minute. Serve while still hot.
Chicken and Broccoli Stir Fry may be served over the Sesame Teriyaki Noodles or along side of them, it is just according to your preference. This meal is a delicious change of pace that while a little more expensive, still won't empty your pocketbook. This meal will easily serve 6 people for the price of $10.16! That's only about $1.79 per person.
