Capelli d'angelo Aglio Olio

Capelli d'angelo, or Angel Hair as it is most commonly known consists of extremely thin, long strands of pasta dried into nests. It is most suitable for use with light sauces such as Aglio Olio, which simply means garlic and oil, the simplest and most popular Italian dressing.
Makes for 2 persons
3 nests Angel Hair pasta
6 Cherry tomatoes, halved
1 Spring onion, diced
4 Fresh button mushrooms, diced
½ potato and ½ sweet potato, oven roasted for about 20 mins till crisp
Seasoning:
Extra virgin olive oil
3 cloves garlic, diced
Fresh parsley, diced
Dried chilli flakes
Organic dried oregano
Salt and pepper
1. Cook angel hair pasta in rapid boiling water for about 10 mins. Be careful not to overcook the pasta as it then becomes too starchy. It should be just right, or as the Italians say al dente.
2. Drain pasta from boiling water and coat pasta well with some olive oil. This prevents the pasta from sticking together. Set aside.
3. Heat ¼ cup of olive oil in pan.
4. Brown garlic, parsley and chilli flakes.
5. Add spring onions, cherry tomatoes and button mushrooms and cook for about 10 mins on high flame.
6. Add cooked pasta and oven roasted potatoes and mix well.
7. Lastly, season with oregano, salt and pepper to taste.
8. Serve with grilled garlic bread. If you like your pasta spicy, add a little more chilli flakes.
