Cookies please

On Sunday I made a batch of homemade peanut butter cookies so the kids would have cookies for the boys lunches, or at least a homemade treat after a great meal, either way it’s a win-win for me because I love peanut butter cookies.  I whipped up this batch made 2 dozen and popped the rest of the dough in the fridge.  Well I have been making a dozen peanut butter cookies every night this week so far and last night I got the preverbal dad can you make more cookies please and of course my lovely wife chimes in and she doesn’t want peanut butter cookies tonight she wants her favorite “no-bake cookies” I go into preparation mode and whip up a batch of no-bake cookies.  Which by the way were probably some of the best ones I have ever whipped up, so everyone has 4 or 5 each of these cookies and guess what I will probably have to make some more tonight, who would have thought that once I do a nice thing for the family then its expected – not that I mind or anything I am a king in the kitchen whether it be a complex meal preparation or quick fix leftovers or even a couple of batches of homemade cookies.  I am up for the task – so bring it on family – give me what you want and I will go forth and prepare…

Wing King -and- Leftovers

Well the morning was pretty uneventful.  We dropped the older boys off at High School the seniors last first day of school and the sophomores first day of High School.  Jen and I decided to do some shopping.  We embarked upon our journey and had a really nice morning.  We reached a point in the day “Lunch time” that we decided we were going to eat at Arby’s so we headed down the road only to see out of the corner of our eye a little place called the “Wing King” now we knew of this place because they guy has tried 2 other times in 2 other locations to wow the masses with flavored deep Fried chicken wings.  Well unfortunately for him the public didn’t see things the way he had envisioned so he would close for a couple of years and try again – I always say “if at first you don’t succeed try, try again”.  I was excited to see that they were giving it another go – because there was another place in town “WingStop” (A chain restaurant) had come to town and that place is always hopping (good food, don’t get me wrong) but I believe that in a small community like ours that we should support local folks in their endeavors. 

The Wings at the “Wing King” I thought were excellent I like to think of myself as a wing connoisseur, my wife and I have tried wings almost everywhere we go at least once.  And up till today I thought “WingStop” had the market.  Until the original the one and only “Wing King” opened back up.  They have something no one else has, they have heart – a chain can make a kick butt wing but it takes someone who truly cares to make a wing that pops.  And let me tell you the wings at the “Wing King” are the real deal the name “Wing King” fits.  They are the kings of the wings.  We have only tried the Regular hot which was sweet, spicy and perfectly cooked to deep fried perfection, we had the Garlic parmesan saturated with a salty pungent garlic sauce and covered with parmesan sprinkled with a little parsley delicious, we also had a raspberry chipotle, I’m not a big raspberry person as a matter of fact I don’t even like raspberry anything but these wings made me appreciate what one could do with raspberries and a nice spicy pepper, but I think my favorite of the day was the Greek seasoned wings, I love the seasonings they used and the simplicity of the preparation, they were so flavorful and enjoyable – we got the 35 wings an order of very good fries and a couple of Dad’s Root beers.  It was a wonderful lunch with my beautiful wife and the best part was we had plenty of leftovers for dinner as well. 

We got home from out outing and picked the youngest up from school.  The two older boys had football practice till 6 pm.  So we are all home and the boys are asking what’s for dinner I told them leftovers, you should have heard the sad, oh no, sighs.  Anyway I pulled out the roasted chicken from the night before, the wings from lunch, the fries from lunch made a batch sweet potato fries for Jen and a few more homemade fries for all of us boys, tossed some Normandy Veggies into the microwave and we bellied up to the table said grace, and dug in to a fabulous leftover meal – everyone ate we talked about the day’s events and the weeks plans – we learned that our exchange student would be arriving on Saturday so there are plans in the making.   We enjoyed yet another fantastic family together.

Better late than never

Better late than never

So Tuesday was a busy day – day two for the youngest in school (already had some homework) the day before the older boys started and one needed jeans so he and mom went out to find him some.  Anyway long story short we had some unexpected guests over around the time I would have started dinner and they stayed a little later than we had planned but it was a nice visit and necessary too.  So, dinner was a little later than expected, but as I always say “better late than never”.  I had thawed a whole chicken and it was ready to quarter up and shove into the oven.  So I got us an oven roasted chicken on and instead of getting crazy with potatoes or rice I opted to just go with the Normandy veggies again – I know boring right well it was an excellent choice for the roasted chicken, which by the way was perfectly cooked.   So anyway Jen decided it was not flavorful enough she had me experiment a while back with a BBQ grilled chicken she insisted that I make a peanut butter sauce and put on hers which I obliged and she loved it.  So she wanted it on her roasted chicken that night and again she loves peanut butter so it was as perfect of a meal as one can get we might have had it late but we had dinner as a family with our normal giving thanks for the meal – we enjoyed our conversation for the day and the expectations of the next day and we once again enjoyed another wonderful Family meal.

Sunday breakfast

Sunday was a pretty nice day we woke up and got ready and went to church to say farewell to our departing priest, he was transferred to a church that needed his dynamics more.   So we enjoyed our morning at church when we arrived home the family was ready for some breakfast.  They challenged me to make biscuits and a southern favorite Chocolate Gravy.   I cheated a little bit on the biscuits (Bisquick) I handed that job off to my oldest son he whipped them right up and in less than 10 minutes we had dough.  The then floured his board and rolled his dough out to a ½ inch.   He cut them out got them on cookie sheets and then popped them in the oven.  While I started to make the gravy, now chocolate gravy is not too much different than regular gravy.   Chocolate gravy starts with a cup of butter melted, you add a cup of flour or just less and make a roux you can add the chocolate like 2 large table spoons of powdered chocolate you know the baking king, you want it somewhat thick but not too thick, then you dump in your cup of sugar, after that you add water and milk and cook on medium heat till the gravy is at your optimal thickness if it’s not thickening you may need to add a little cornstarch and water mixture make sure you keep stirring the gravy so it doesn’t stick to the bottom.  So we had some sausage – I patted out 5 patties and then we headed to the table – we gave thanks for – what our lord had provided, and we sat and enjoyed a true southern treat.  But most of all we had a Family Meal.

Saturday evening

Saturday brought something that was more familiar, during the day Jen went out to purchase food for the next couple of weeks. In her journey to purchase our meals she decided that she wanted to have some Country Style pork ribs which by the way are an excellent choice by the way. So for dinner Saturday night I decided that Fried pork ribs was in order. I seasoned the ribs with salt and pepper and cooked them in the pork fat from the bacon a couple of days back. I also baked a few potatoes to add in the as the starch 4 regular potatoes and 1 sweet potato for Jen. She had also picked up a package of frozen veggies a Normandy Blend which had cauliflower, broccoli, carrots and squash. Which I put in a glass bowl and put it into the microwave with a couple of teaspoons of water a little salt and pepper. So the ribs were cooked to perfection and had a beautiful a rich caramel color to each one, they were so easy to cut and had such a wonderful flavor. The potatoes were perfect and of course everyone was able to put the toppings of their choice, butter salt, pepper and cheese for anyone who needed it. The frozen veggie which are normally not very good and can easily be over cooked – this bowl of veggies was very good. So we sat down at our table and we had a great conversation because family is what makes us – so we enjoyed another fabulous Cabalar Family meal.
