Restarting Again

So here it is I am having to restart again I feel so far off everything it is not funny. I am recommitting today to my goals including this weight loss. I am now my heaviest ever at 309.2 lbs. I feel disgusting for even have to write that number.

I bought a Zumba video game this morning, did it and it kicked my butt and it was so much fun. I really enjoyed it. I will report back in a few days when I have worked out a few more times. I am jumping in with both feet. I have cut out sodas, I am cutting down on how much I eat and trying to make smarter choices about which foods I eat. It is difficult but I know it can be done.

I am also doing a morning Zumba session, a stretching/ yoga session at lunch, then a running session in the afternoon followed by Biggest Loser in the evening and finally another short stretching/yoga session before bed. I am tired of saying I don't have time, from now on I am putting me first and making time for working out.

Once summer is in full swing down here, I am going to add swimming in the morning and evening with my daughter and switch my Zumba and running times. You and I will see a fitter Crystal in the very new future.

I will keep you updated and as always help keep me motivated and keep me in line.

Faked Fried Chicken

This is a great recipe, I found it on Woman's Day website. I have tweaked it a little bit until I think it is perfect. This chicken tastes best if it is cooked off of the baking dishes, I simply sprayed my cooling racks for my cookies and cooked it on there. I do not have a photo of this recipe yet but the next time I cook it I will include the picture here. But I have found an amusing little chicken to put here until I do.



Fake Fried Chicken

2 package of Ranch Salad Dressing Mix
1/3 cup reduced fat mayonnaise or Miracle Whip
1/4 cup of water
2 teaspoons of black pepper
1 large can of French Fried Onion Rings (like you put on green bean casserole)
4-6 chicken breast

Preheat oven to 400ºF.

Place a cooking cooling rack in a baking sheet lined with foil.

Mix 1 package of Ranch Salad Dressing Mix with mayonnaise and water. Set aside.

Mix remaining ranch mix with French fried onion rings in a large ziptop bag, then crush.

Dip chicken breast in wet mix.
Immediately place chicken breast in bag of crushed onion rings and toss to coat.

Bake on baking sheet for 15- 20 minutes, until chicken is crispy and thoroughly cooked.



Have you tried it? Do you love it? I knew you would. Leave me some comments let me know how it worked out for you. Oh just a note on this recipe, to me it is best served hot, it just was not very crispy the next day. Maybe if I had warmed it in a toaster oven it would have been better...

Homemade Banana Nut Bread

Most people are nearly terrified at the idea of baking bread. Here is a great recipe to start baking bread. This recipe is great to make ahead for a perfect pick me up snack and a wonderful quick and easy breakfast. Of course if you have a distaste or allergy for nuts please eliminate them from the recipe. Makes approximately 8-10 servings.



Banana Nut Bread

• 1 1/4 cups unbleached all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon fine salt
• 2 large eggs, at room temperature
• 1/2 teaspoon vanilla extract
• 1/2 cup unsalted butter, or margarine
• 3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
• 1/2 cup walnut pieces
1 cup of sugar

Mix baking soda, and salt into a medium bowl, set aside.
Whisk the eggs and vanilla together, in measuring cup, set aside.
Spray a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
Cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated.
Add the bananas (the mixture will appear to be curdled, so don't worry)
Mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan.
Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean.



This recipe I found on this website nearly a year ago. I make this anytime my bananas start getting over ripe, (which are sometimes hid to ensure they do get over ripe). It is a wonderful recipe and I have even given it as a gift. (Which never even made it home, the family ate it in the car)

Update: I have made it with whole wheat flour, still baking but I will update you as soon as I taste it!

Ya'll Are Going to Love Me

By this time next week their will be about 20 more recipes posted on here. I am working hard to get them all written up and put on here. I am also in the process of making a cook book for my family and friends, so each recipe on this website will also be in my cook book I will be giving out at Christmas this year. Nine months to get it pulled together. But, hey, if I can make a complete new life in nine months getting this cook book put together should be a snap. So as always keep cooking and check back here periodically for my new recipes.

Some of these recipes are over 100 years old, handed down from my Great Great Grandmother. The History in that is amazing.

RESULTS

I am back up again this time nearly 4 lbs, but I lost 3.75 inches this week, so I am okay with the weight gain. Well I am not okay with the weight gain but I am going to accept it as I have lost inches and that is just as important. No Pictures this week, I am going to only add pictures during the first week of the month, so we can actually see the difference.

Working out with The Hubby

Yesterday I got the Biggest Loser Challenge for Wii. I thought yea this will be a way to get me back into my running program. Keep in mind I have been jogging three times a week for 35 minutes in each time. IT KICKED MY BUTT. Seriously it had seemingly five or six levels of fitness during the fitness test, I only passed three and had to stop.

So tonight I asked my husband to try it out. I assume so that he could show me up he made it as far as i did. So then we did the challenge together, it kicked our butts. So we are tired (and I won) and we are tired. It was a lot of fun seeing him work as hard as me at something. It was a whole new togetherness. Kind of like when our daughter had colic and we took turns holding her and loving her

Super Easy Garlic Parmesan Chicken

This recipe is quick and easy. This is a great light dinner that even your children can help make. If you are trying to impress a certain someone in your life my husband gives this a big thumbs up. Oh and if you are on Weight Watchers new points plus program one serving (one chicken breast) will only cost you 5 points, there is something to smile about right there. This makes lovely left overs that can easily be cut up and added to a salad for lunch the next day. (If you want to reheat the chicken I suggest using a toaster oven to keep that crispy crust.)

Big Enough Person plus 1/13/11 Results

Okay no pun intended but I am a big enough person to admit what i am doing is not working. It is not working I have changed my diet, started exercising and I am gaining and losing the same five pounds. Here is the bad news I am now nearly pound heavier than I was at my heaviest point of my pregnancy. My current weight 305.8 lbs.

Happy Valentine's Y'all

Celebrating Valentine's Day

I loved Valentine's Day, when I was in primary school, I would save a nice size shoe box, which I would spend hours upon hours painting, papering, stamping and decorating. Then I would sit down with store bought Valentine's and write down each of my classmates names on the To: section of the the tag. If I added the hours I spent this holiday as a child, it would be at least 15 hours. But as an adult, my dear husband has not nearly got the same amount of time. Between his work schedule, my work schedule, the kids, the house, and the pets, Valentines has gone from maybe a kiss in the morning and a mumbled Happy Valentines in between forkfuls of pasta. How many of you suffer from the same problem?

The only thing I noticed about the whole wheat flour is that the bread bakes up much darker.

Okay so I tasted it and I swear there is very little to no difference. It was so good, I am almost tempted to ruin my dinner (baked spaghetti) and eat an entire slice of this. It is going to be so good in the morning for breakfast.
