Bruschetta

Pronounced [brus- ket- ta], bruschetta is a popular Italian entrée that is so simple to make and so satisfying to eat!
Makes for 2 persons
Organic bread
Extra virgin olive oil
2 medium roma tomatoes, chopped
¼ Spanish onion, diced
2 large cloves garlic, 1 diced & the other halved
Fresh basil leaves, diced
1 tablespoon balsamic vinegar
Salt and pepper
1. Rub the halved cloves of garlic on 4 large slices of bread and grill on both sides for 10 minutes.
2. Meanwhile, combine the tomatoes, onion, diced garlic, basil, balsamic vinegar and olive oil and mix well.
3. Add salt and pepper to taste.
4. Remove grilled bread and pour olive oil over the bread.
5. Top with tomato mixture.
6. Serve as an entrée to your favourite pasta and enjoy! This dish also makes a good snack.
