Easy Cake

CHOCOLATE DELIGHT CAKE

Ingredients

1 Chocolate Cake Mix
1 Cup mini Chocolate Chips
12 oz. Coca Cola
1 large Egg
1 Cup Caramel (ice cream) Topping
1 Can Condensed Sweetened Milk
4 Cups Cool Whip
1 Cup Toffee Bits

Instructions

In mixing bowl, combine the Cake Mix, mini Chocolate Chips, Coca Cola, and the Egg.
Pour into a greased 13" x 9" pan.
Bake at 350 degrees for 30 minutes.
Place on rack to cool.
Once the cake has cooled, use the handle end of a wooden spoon to poke holes in the top of the cake.
Mix the Caramel Topping and the Sweetened Condensed Milk together until well combined.
Pour Caramel mixture over the Cake.
Top the Cake with the Cool Whip.
Sprinkle with Toffee Bits.

Will keep refrigerated for 2 days.

Salad Time

TACO SALAD

Ingredients

2 lbs. Ground Beef
4 Cups Iceberg Lettuce (chopped)
2 Cups Napa Cabbage (chopped)
1 small can Red Enchilada Sauce
1/4 Cup chopped Cilantro
8 Colossol Black Olives (quartered lengthwise)
2 Cups Napolitos (washed and chopped)
4 Green Onions (diced)
2 Large Tomatoes (quartered)
1 large Avacado (16 slices)
1/2 Cup Sour Cream
1/2 Cup Salsa
1/2 Cup Mexican Blend Cheese (shredded)

instructions

Brown the Ground Beef over medium heat. Add 1/2 can of Red Enchilada Sauce and 1/4 Cup chopped Cilantro. Turn down heat and simmer.
Place 1 cup chopped Lettuce and 1/4 cup chopped Cabbage each on 4 dinner plates.
Create a circle leaving the center empty.
Spoon the cooked Ground Beef into the center.
Around the edge of the salad greens:
Place 8 Black Olive quarters, diced Napolitos, and diced Green Onions.
Place 4 Avacado slices on one edge of salad.
Place 2 Tomato wedges next to Avacado slices.
Sprinkle shredded cheese on top of Ground Beef.
Place Sour Cream, Salsa, Cheese, and remaining Enchilada Sauce in serving dishes to be added to salad as dressing.

CHEESE POPOVERS

Ingredients

1 Cup Flour
1/2 Teaspoon Salt
4 Large Eggs
1 Cup Milk
1 Cup grated Sharp Cheddar Cheese
1 Tablespoon Butter, melted

Instructions

Combine Flour and Salt, set aside.
In large bowl, beat Eggs; add Milk and melted Butter.
Add the Flour/Salt mixture.
Beat with electric mixer until smooth.
Stir in the grated Sharp Cheddar Cheese.

Spoon into large, buttered, 9 cup muffin tin, filling 2/3 full.
Bake at 350 degrees for 45 minutes.

With autumn in view, my mouth waters for the taste of squash! Fresh picked from the garden is the best way to start this soup.

AUTUMN SQUASH SOUP
Ingredients
2 Crook-neck Squash, cleaned and diced.
2 Tomatoes, peeled and diced.
(place tomatoes in boiling water until skin splits, remove from water, run under cold water until cool to handle for peeling)
1/4 lb. Maple Sausage
1/4 lb. Ground Hamburger
1 clove Garlic, crushed
4 Tablespoons unsalted butter
20 Black Olives, cut in half lengthwise.
1/2 Cup Marinara Sauce
1 Teaspoon Old Bay Seasoning
1 Cup cooked Elbow Macaroni
1/2 Cup water

Cook Elbow Macaroni, drain, set aside.
Fry Sausage and Hamburger together on medium low heat. Reduce heat to low when meat is fully cooked. Add water, unsalted butter, garlic, tomatoes, squash, olives, and marinara sauce. Simmer until squash is tender, about 20 minutes. Stir occasionally.
Add cooked macaroni and Old Bay seasoning.
Simmer for another 15 minutes. Salt and pepper to taste. (Hot pepper sauce really adds kick to this soup.)
