Easy Breakfast

BACON QUICHE

Ingredients

1/2 lb Applewood Bacon, cut into bite sized pieces while raw.
1 Cup Sour Cream
1 Cup Mayonnaise
1 Cup Small Curd Cottage Cheese
6 Large Eggs
1 tsp. Old Bay Seasoning
1/2 Cup Flour
1/2 Cup Milk

Instructions

Preheat oven to 350 degrees.

Fry Applewood Bacon in fry pan just until the fat turns opaque. Drain fat and set aside.

Prepare a deep dish pie pan by coating with non-stick spray.

In large mixing bowl, combine the Sour Cream, Mayonnaise, Cottage Cheese, Eggs, Flour, Seasoning, and Milk. Mix until batter is smooth.

Place Applewood Bacon in bottom of prepared deep dish pie pan. Pour batter over Bacon and gently mix.

Bake at 350 degrees for 30 minutes or until inserted knife comes out clean.

PUMPKIN BARS

Ingredients

6 Large Eggs
3 Cups Sugar
3 Cups canned Pumpkin
1 1/2 Cups Vegetable Oil
3 Cups Flour
2 Teaspoons ground Cinnamon
3 Teaspoons Baking Powder
2 Teaspoons Baking Soda

Instructions

Mix first four ingredients until well blended.
Add flour one cup at a time until well mixed with batter.
Sift Cinnamon, baking powder and baking soda over batter.
Mix until well blended.
Pour into a greased 12 x 24 pan.
Bake at 325 degrees for 45 minutes. (or until inserted knife comes out clean)

Easy Casseroles

CHICKEN ENCHILADAS

Ingredients

10 Flour Tortillas
2 Cups Sour Cream
1 Can Cream of Mushroom Soup
4 oz. Goat Cheese, softened
1Cup Cheddar Cheese, shredded
1 Cup Pepper Jack Cheese, shredded
1/2 Cup Milk
1/2 Cup Cilantro, chopped small
1 Small Sweet Onion, diced
4 Boneless, Skinless, Chicken Breasts, cut into small pieces while raw
2 Celery Stalks, chopped small

Instructions

Preheat oven to 350 degrees.
Prepare 9 x 13 inch casserole dish with non-stick spray.

Saute Celery and Onion until tender, over medium heat. Add Chicken pieces and cook until meat turns color. Do not overcook the chicken as it will continue to cook fully in the oven.

In a large bowl, combine the sour cream and mushroom soup. Mix well. Add the cilantro, chicken and vegetable saute, and the cheeses. Combine until well incorporated.

Fill the tortilla shells with 2 tablespoons of the mixture. Roll shells and place in prepared casserole dish.

Add milk to remaining mix. Stir well.

Pour over tortillas Bake uncovered for 45 minutes. Top should be golden brown and sauce bubbling when done.
