Chicken Strip Salad

This is a nice summer Salad great for those really hot nights.

Ingreedients
500grams Chicken Breast
1/3 Cup soy sauce
1tbsp Honey
2tsp Sweet Chilli
100g baby spinich leaves
1 whole green cucumber
2 tomatos
1/2 Red Onion
4 mushrooms

Method.
1. Cut chicken breasts into long strips, place in bowl and add soy sauce, honey and sweet chilli. Cover with glad wrap and let marinate for an hour
2. Heat frying pan up and place chicken in. Let chicken cook all the way through turning strips over regularly.
3. While chicken is cooking prepare salad.
4. Place salad on plate, place chicken strips on top and drizzle remaining marinade over chicken and salad.

Back to Basics- White sauce

If you want to become a master in your kitchen it is absolutely essential to learn how to make the basic elements. Today I have chosen a white sauce. You can use this base sauce for various dishes including cabonara, volevaunts, white parsley sauce for a cooked silverside, ontop of grilled fish etc.

The base for this recipe is pretty simple.
Ingreedients

1-2 tbsp butter
1-2 tbsp plain flour
1-2 cups of milk
salt and pepper along with your choice of dried herbs and spices depending on what flavour you need for the dish

Method.
1. On medium heat, place butter in saucepan to melt
2. Once butter is melted sprinkle plain flour on top and stir until it turns into a paste like mixture.
3. Once the mixture is like a paste add milk bit by bit. Stir constantly until the mixture is of a thicker texture. If your mix isn't thick enough you can add extra flour but be careful not to add too much or it will turn clumpy.
4. Add your desired herbs and spices to complete the white sauce.

The Northern lights is one of the most captivating and mystifying wonders of this world. Some may say that it is an out of this world experience.

I have been looking at doing a tour of the Northern lights for some time now and I have recently discovered an affordable tour to do between November and Feburary each year, located in Whitehorse, Canada.

I have included a link that will take you to their website. This would be such an amazing experience. Not only do you view the Northern lights, there is also the opportunity to go dog sledding and snow-mobiling.

Music Boat Cruises From Sydney

I only found out today that there is such a thing as a Music cruise that leaves from Sydney. I am thinking about booking one for my Mums birthday as she loves watching live entertainment.

These cruises last only for 4 days and they have a musical theme. Elvis, the 60's, 70's etc

Antarctica is definately one of the places on my list, it just looks fantastic. What a great expeience, i plan to go in a couple of years too, just the saving part is the obstacle.
