Moving

I went to check the mail last week and in it was a letter saying we had til the 17th to move out. Really?! That short of a notice?! So Bo called and they said that we had to be out by the 24th. That's better, but not much better. So I've been packing like crazy. We are supposed to move into our new place on Saturday. My friend is moving out to go up to Pinedale for work but still has a lot left on his lease so he is just letting us stay there. Give us a place to live and saves him money lol. And we get to bring our animals, which is a big plus.

Still, super stressful. And exhausting. And it's doesn't help that my daughter has been a handful all week. She just has a terrible attitude. She's been crying about anything. I asked her to get into her pj's and she laid on the ground and kicked her feet and fake cried. She's 6! I am at my wit's end with her!

So I was reading tips on how to handle that type of situation and actually found a bunch of good ideas.

Check this one out, it is organized into age groups, I liked it a lot.

Lonely Week

Bo was home for a week and a half! It was nice having him home for more than a day or 2. He went back to work last night, and who knows how long til he'll get to come home again. Might be awhile. But I am grateful that we got to spend Mother's Day together and have some fun.

We went and ate sushi at The Flying Sumo in Park City, UT last week. It was so good!! I never, EVER thought I'd like sushi but I really do. It's so tasty

Then last night we had dinner at Bonsai in Rock Springs, WY. We had some sushi as well as some sesame chicken. Delicious!! I highly recommend eating there.

So my favorite sushi roll is the one called the Spider. It is so so yummy!! I feel like when Bo is home I gain like 5lbs because all we do is indulge lol. Well, now that he is gone, it is back to eating grilled chicken and steamed veggies and working out everyday!!

And, I'm going to start tanning as well. I am pretty dang pale and the weather is finally starting to be nice again so I need some color

YuMmY Stuffed Mushrooms!

These are some great stuffed mushrooms, they are always a hit! A great appetizer for BBQ's or other get togethers. I usually grill these up before we start cooking the meat for our BBQ's. People just can't get enough of these, we always run out fast!

1 pkg (3 oz.) cream cheese, softened
1/4 cup mayo
1 jar (6 1/2 oz) marinated artichoke hearts, drained and finely chopped
1/4 cup grated Parmesan cheese
2 tbsp finely chopped green onion
20-25 large fresh mushrooms, stems removed
1/4 cup seasoned bread crumbs
2 tsp olive oil

~ In a mixing bowl, beat the cream cheese and mayo until smooth. Beat in the artichokes, parmesan cheese and onion. Lightly spray tops of mushrooms with cooking spray. Spoon cheese mixture into mushroom caps. Combine bread crumbs and oil; sprinkle over mushrooms.

~ Grill, covered, over indirect medium heat for 8-10 minutes or until mushrooms are tender.

Santa Fe Salad

My favorite fast food salad of all time was the Santa Fe Salad from Arby's. I was so bummed when they stopped selling it. One day while grocery shopping I could some spicy ranch dressing and decided to make my own!

Drama Drama Drama

These past few days have been full of it. Who would've known a small town like mine could have so much drama. Or even more, who would've known that 2 girls could creat so much drama.

Someone has been stirring up things with people, then telling them that I'm the one that told them the story or piece of information. Really? Because I don't even like her, I don't talk to her, and even if I had to I certainly wouldn't be sitting around, sharing stories

Nip/Tuck

I'm currently watching the last disk for season 2. I'm hooked! So much drama!

I was pretty disappointed in the final episode of the entire series. Ugh. It was just so... blah. Too mellow for the very last episode of one of the most dramatic series ever on tv.

Pork Chops

These are soooo good! My husband cooked them for us one night and they are absolutely delicious! He got this from his cookbook, The Beer Lover's Cookbook by John Schlimm. That cookbook is definitely worth the purchase!

Foreclosure

My husband and I are going through a foreclosure. Not the proudest of moments, but we are one of many who were hit hard with the economy and just couldn't get caught up on the house in time.

It sucks, because you buy a house thinking you will be in that home for years to come. We've been here for 2 years. It all happened so fast
